Sometimes it's the simple things that are best.In thinking about life, and how I like to spend my time, I realize that what I enjoy most in life are the simple things.
I don't like a crazy-jam-packed schedule. I don't like a hectic rat-race. I certainly enjoy time with friends, and going to parties, and dinners out, and traveling and trips ... but at a good spaced-out-not-busy-all-the-time kind of pace.
My favorite times are in the kitchen baking a cake or batch of cookies. Or enjoying a glass {or bottle!} of wine with my Mom. Robbing our bees with my husband. Or playing games with my family. Low-key, simple kind of things.
Playing card games and board games is something I've done with my family since I was a little girl.
I have very fond memories of us all ... my Mom, Dad, brother, and me ... sitting around the little table in our family room playing Monopoly, or Parcheesi, or Gin Rummy. And Canasta. Oh, how we used to love to play Canasta! I haven't played in so long, that I wouldn't even know where to begin now. My Dad and I used to play Cribbage all the time, too. And still play some now. Though he beats me all. the. time. To this day, I think I've only beaten him three times in my life.
Playing games is still something I love to do with my family.
Mom, Dad, and I have a new game we've started playing ... called Farkle. Here we are playing Farkle on, like, a random Tuesday afternoon not too long ago ...

It's a simple little dice game that pretty much comes down to luck and guts. Roll dice combinations that are worth points? ... your turn keeps going, and you keep wracking up points. Having guts to keep rolling = big points. But if you have a roll with no scoring dice combinations ... you're done! ... and you forfeit any accumulated points for that turn.
My Farkle philosophy = No guts, no glory! {And yeh, I probably shouldn't go to Vegas.}
And like these simple low-carb Ham & Pickle Bites, too. Probably one of the absolute easiest little party or snack foods you can make, but yet they're one of our absolute favorites.
You can make these with either baby dill pickles or pickled okra ... both are great, but we love them with okra the best.
So just how simple are these? Very simple. Very very simple indeed.
Just spread a deli ham slice with softened cream cheese and place a baby dill pickle or pickled okra pod in the center ...

- Deli ham slices
- Jar of baby dill pickles or pickled okra
- Cream cheese, softened {plain or onion & chive flavored}

How to cook 3-Ingredient Low-Carb Ham & Pickle Bites
- Drain dill {or okra} pickles; blot dry with paper towels to remove as much moisture as possible.
- Lay a ham slice out flat; spread with a thin layer of cream cheese. Place a pickle or okra pod in the middle and roll up. Insert three toothpicks, spaced evenly apart. Repeat with remaining ham slices and pickles to make your desired amount. Cover and refrigerate for about an hour. {Chilling sets the cream cheese a bit and makes the Ham & Pickle Bites easier to cut. If you're short on time and wan to serve the bites immediately, you can skip the chilling step.}
- Use a sharp knife to cut between the toothpicks, separating each roll into three pieces. {For clean cuts, wipe your knife with a paper towel after each cut.}
TRACEY'S NOTES
- You can use cream cheese sold in the 'brick' or cream cheese spread sold in the little plastic containers. Plain cream cheese tastes great, but we think chive & onion flavored cream cheese spread tastes even better!
- We often leave the roll ups whole and enjoy them as snacks or for lunch instead of as party fare.
- We love these with both dill pickles and okra, but like okra best.
