Our moving process is in full swing! So I'm still relying on easy, quick-to-pull-together dishes to get dinner on the table during this crazy time - like Quick Weeknight Chicken Penne Alfredo ... or Pizza Spaghetti Bake ... or this easy family favorite 5-Cup Ambrosia Fruit Salad.
5-Cup Ambrosia Fruit Salad gets its name from the supposedly five cups of "stuff used to make it. 5 ingredients - using 1 cup of each. However, over time, the recipe has morphed to be not exactly 5 cups. We'll be okay with that creative stretch with the name, right?
As for our move, I'm happy to say we've finally found our new home and are gearing toward a July 31st closing date. But moving to a new house isn't the first moving challenge in our process. No. My first moving challenge was packing up and moving my classroom.
Which, trust me, was an ordeal in and of itself.
Packing up a classroom for a move is not really an easy feat. Especially when, to quote my Principal, "You have a lot of stuff."
Yes, I have a lot of "stuff."
One thing I learned while packing up? ... I may have a slight children's literature addiction. Yes, I love to buy books. And I learned the very hard way that I have a lot of them.
I mean seriously, look at all the books!
It took me an entire morning to pack up the books. Just. The. Books.
Oh, and it took an entire car load to move them, too. Totally filled my car - and I don't have a super small car. It looked a little weighed down, too - so much so I was worried I'd scrape on the speed bumps in my neighborhood.
But want to know the funnier part? The books actually gave the roll-y hand cart I was using a flat tire! No joke. Guess I should have split them into two loads.
Here's my sad little classroom during the packing up process ...
All the bright colors off the walls. All the desks moved out. Chairs stacked. Books and supplies packed. Students long gone for the summer.
Sad.
And now?
Now "the classroom" sits waiting in my garage.
Waiting for its next adventures. Waiting for its next school. Waiting for its next students. The books ... waiting for their next readers.
And me? Waiting to find out the next classroom that will hold the title of "Harrelson Way."
Until then and until everything else with our moving process settles down, I'll continue to rely on quick and easy family favorite recipes like 5-Cup Ambrosia Fruit Salad. It's the only way I can get yummy food on the table without going crazy during this crazy time.

- 1 (20 oz.) can chunk pineapple, drained
- 1 (15 oz.) can mandarin oranges, drained
- 1 c. sweetened flaked coconut
- 1 1/2 c. miniature marshmallows
- 1 c. sour cream
instructions:
How to cook 5-Cup Ambrosia Fruit Salad
- Mix together pineapple chunks, coconut, marshmallows, and sour cream until well combined. Gently stir in mandarin oranges.
- Chill for at least four hours before serving.

- This classic 5-Cup Ambrosia Salad gets its name from the amount of total ingredients originally used to make it. Originally, the recipe called for one cup of each of the five ingredients. As written above, the recipe makes more than five cups total ... the cans of fruit each contain more than one cup, and I always add extra marshmallows. So while it's not really five cups of salad, the name remains the same!
