But when you cook up a pretty good-sized bird like we do and end up (purposefully) with lots of turkey leftovers, you need to do a little more with it than just make turkey sandwiches.

Some of our favorite ways to enjoy leftover turkey are in a nice no-fuss Leftover Turkey Noodle Casserole, a Creamy Turkey Soup with Spinach, and our daughter's favorite Turketti.

I ran across the base recipe for this dish in one of my favorite Southern comfort food cookbooks -- Mama Dip's Kitchen. Mama Dip's is a country-cooking restaurant in the college town of Chapel Hill, NC, where my brother went to school. I just love Mama Dip's family-friendly, down-home Southern recipes.

I tweaked Mama Dip's recipe just a tad to create this version. I wanted to make this Creamed Turkey recipe super quick and easy to make. So I took out the step of making a homemade turkey stock and replaced it with canned chicken broth instead. I also added a little more milk for extra creaminess and increased the seasoning a bit.

With just 6 basic ingredients, After-the-Holiday-Creamed Turkey is such a simple little dish to make. But despite its simplicity, it delivers up great down-home comfort food flavor.

This Creamed Turkey is essentially chopped leftover turkey surrounded in milk gravy, much like the well known beloved sausage milk gravy of the South.

Unlike sausage gravy though, this turkey version's gravy has a can of condensed cream of mushroom soup stirred in.

The cream of mushroom soup brings creamy thickness to the dish, as well as flavor that goes really nicely with the turkey.

To whip this up for dinner takes no time at all. Just start by coarsely chopping about 3 cups of leftover turkey.

Then cook up a very simple milk gravy with butter, flour, chicken broth, some milk, and cream of mushroom soup.

Once the milk gravy is thickened and bubbly, stir in the chopped turkey.

Simmer the turkey in the sauce until the turkey is heated through. Then you're ready to serve it up.

Truly, truly super easy, right?

Serve the Creamed Turkey over warm cooked noodles, rice, or spooned over pieces of toast. We like it best over egg noodles, but rest assured it's tasty no matter which you choose to spoon it on.

3 c. chopped leftover turkey
6 T. butter
1/4 c. all-purpose flour
4 c. chicken broth
3/4 c. milk
1 (10 3/4 oz.) can cream of mushroom soup
1/8 tsp. salt
pinch pepper

How to cook After-the-Holiday Creamed Turkey

Over medium heat, melt butter in a skillet or saucepan. Add flour and whisk together with the butter until well combined.
Whisk in chicken broth, milk, and cream of mushroom soup. Cook, stirring very frequently, until thickened, about 5 to 7 minutes.
Add chopped turkey, salt, and pepper. Let simmer about 10 minutes until turkey is heated through.
Serve over warm noodles, rice, or toast.
