Bacon and Egg Grilled Cheese Sandwiches
These deliciously crisp and melty bacon and egg grilled cheese sandwiches are the perfect breakfast for a cold morning!
I'm so excited to introduce you to my new favorite breakfast! I'm a huge fan of grilled cheese sandwiches, and have to confess that I eat plain grilled cheese sandwiches for breakfast embarrassingly often. One day recently, though, it occurred to me that I could make a grilled cheese sandwich with all my favorite breakfast foods inside! (I know, how groundbreaking of me.) Feeling like a double-bacon-genius-burger (a la Homer Simpson), I set to work, and in just a few minutes had this glorious sandwich of gooey cheese, crisp bacon, golden toasted bread, and delicious scrambled eggs. My husband said it's the best breakfast he's had in years, and my kids loved their sandwiches too! As much as I hate actually cooking breakfast (instead of just setting out frozen waffles and/or cold cereal), these sandwiches make it all worthwhile. I've made them twice within a few days, and plan to make them many many more times!
Bacon and Egg Grilled Cheese Sandwiches
4 slices bacon, cooked
1 teaspoon oil
4 eggs, beaten
salt and pepper to taste
4 thin slices of cheddar cheese (or two thicker slices)
4 slices bread
2 teaspoons butter, softened
Heat the oil in a medium skillet over medium heat. Add the eggs and stir gently, until scrambled. Salt and pepper to taste. Heat a large skillet over medium heat. To assemble the sandwiches, spread butter on one side of each of the slices of bread. On the un-buttered side of two slices, layer the cheese, bacon, and half of the scrambled eggs. Top with another piece of bread, butter side up. Place in the preheated skillet and cook 3-4 minutes per side, or until golden brown and the cheese is melted.
