Right up front, I'll say -- I have no idea where this cocktail gets its name.

Obviously by the name I assumed it had some connection to the classic Shirley Temple mocktail. But after a little research it appears, unlike the Shirley Temple drink, the Betsie Temple isn't named after an actual person.

Its origins indeed have me stumped.  But what I do know? -- This Betsie Temple Cocktail is gooood!

With its combination of pineapple and coconut, this is one fabulously fruity drink.  It's quite sweet, with a wonderful tropical flavor.

If you're not a fan of sweet drinks, this one's not for you.  If you do love sweet fruity drinks, it's right up there with our Gilligan's Island Cocktail, Caribbean Rum Punch, and Watermelon Rum Slush in tropical cocktail deliciousness.

And this Betsie Temple Cocktail is truly one of the simplest and easiest cocktails around.  If you can put ice in a glass and pour, then you've got all the skills it takes to whip up one of these tasty drinks.

All you need to make a Betsie Temple is 3 simple ingredients -- pineapple juice, grenadine, and Malibu coconut rum.  That's it.

No super fancy ingredients here.  No long list of mix-ins.  Just a straight-up mixture of these three cocktail basics.

I love that it only takes one type of liquor to mix this drink.  Which means I don't have to run to the liquor store to be pick up a bunch of bottles of different stuff.  Malibu coconut rum is something we keep on hand in our liquor cabinet, which is nice.

And I'm guessing many fruity-drink lovers keep a bottle of the stuff on hand, too.

Not familiar with grenadine?

Shirley Temple and this Betsie Temple their characteristic bright pink hue and sweet taste.  You can find grenadine in a small bottle in the drink mixers section of the grocery store {or order Grenadine from Amazon}.

If you don't feel like buying grenadine or can't find it, maraschino cherry juice can be used instead in a pinch.  Just pour off a little of the juice from the jar of cherries.  Be aware the finished drink won't be quite as sweet, or quite as pink, though.

The cocktail will turn a pretty shade of pink to orangey-pink, depending on the color tone of your pineapple juice.

To mix your Betsie Temple, place a few ice cubes in an old fashioned-style or collins-style cocktail glass.  Then just pour in equal parts pineapple juice and Malibu coconut rum.  Add a little splash of grenadine and stir until everything's well combined.

The cocktail will turn a pretty shade of pink to orangey-pink, depending on the color tone of your pineapple juice.  

If the pineapple juice is very light in color, the finished cocktail will be a very light shade of pink.  If the pineapple juice is a deeper richer shade of yellow, the finished cocktail will be a more orangey-pink like the cocktail in this post's photos.  

Once mixed, garnish the cocktail with a few maraschino cherries, and you're ready to enjoy!

You may be asking, can you mix Betsie Temples in a larger batch rather than individual cocktails?

Absolutely, yes.

Betsie Temples can be prepared in a large batch, and can be prepared in advance, too.  To make a larger batch just combine equal amounts of pineapple juice and Malibu coconut rum in a pitcher.  Then add 2 teaspoons grenadine per each cup of pineapple juice used.  So, 2 cups of pineapple juice = 4 teaspoons grenadine; 3 cups pineapple juice = 6 teaspoons grenadine, etc.

Refrigerate the mixture until needed.  Then pour over ice and garnish with maraschino cherries at the time of serving.  Easy!
Whip one -- or a few -- up for Valentine's Day, Mother's Day, Easter brunch, or just everyday sipping.
But no matter where this Betsie Temple cocktail's name originated, whether you mix it up individually or as a larger batch, or whether the finished cocktail turns out light pink or some shade of orangey-pink, one thing's for sure -- It's just plain delicious.

  • 4 oz. pineapple juice
