Raise your hand if you've ever been on a Caribbean cruise. Now, raise your hand if you've ever taken one of those side trips at port that takes you on a little boat cruise or to a fun beach island ... and serves you a seemingly endless cup of rum punch.

Yes, this is a make-at-home version of that punch. And it's oh, so good.

I was first introduced to Caribbean Rum Punch on a cruise I took back in my early 20s. It was the first cruise I'd ever been on, and man, was it fun.

True to form of most Caribbean cruise adventures, we took a side trip to a little beach island one day to play in the sand and waves at one of the port stops. On the pontoon boat ride to the island, a small band played fun calypso music, we all danced, did the limbo, had a great time ... and drank probably more than our fair share of their tasty rum punch.

And now, thanks to this Caribbean Rum Punch recipe, we're able to enjoy those same fabulous flavors at home - no plane or cruise tickets needed.

It's a perfect cocktail for sipping poolside, or in a shaded porch rocking chair on a hot day.

Do be warned with this cocktail, though - it's a strong one. Which hey, may just be how it got its "punch" name - because it sure packs a big one.

The punch's base is pineapple juice, sweet and sour mix, and then a combination of three liquors - light rum, dark rum, and Triple Sec orange liqueur.

It then gets its wonderful tropical coconut flavor from a dose of cream of coconut.

Cream of coconut is the sweet, thick, almost syrupy stuff you find in the cocktail mixers section of the grocery store. It's not coconut milk - the thin, milky stuff that typically comes in a can.

When the liquors, pineapple juice, sweet and sour mix, and cream of coconut are mixed together, the cocktail mixture will look like this:

Kind of a drab, colorless, almost lifeless mix, don't you think? Not quite the brightly-colored, fun, screams-of-tropical-paradise drink we think of when we picture rum punch.

So, where does Caribbean Rum Punch get its signature pretty pinkish hue?

From grenadine.

Shirley Temples and this rum punch their characteristic pink hue and sweet taste. You can find grenadine in a small bottle in the drink mixers section of the grocery store {or order Grenadine from Amazon}.

If you don't feel like buying grenadine or can't find it, maraschino cherry juice can be used instead in a pinch. Just pour off a little of the juice from the jar of cherries. Be aware the finished drink won't be quite as sweet, or quite as pink, though.

To finish off the rum punch cocktail, pour in some grenadine ...

Then give it a good stir, and watch the color transform into the tropical color we were expecting.

Garnish the glass with an orange slice, maraschino cherry, and a fresh pineapple wedge if you'd like, and you're ready to sip away on the deliciousness.
