I have a total love for cardamom. There's just something about its strong, distinctive florally flavor I adore.
And when chai tea latte? It's a little bit of heaven on Earth for me.
Drinking chai tea lattes is how my love for cardamom began. I'm not a coffee drinker, so when I would meet a coworker for coffee back in my corporate days, finding something to drink was a bit of a challenge. And I couldn't exactly have coffee shop meetings sitting there drinking nothing - that would be just a bit weird and awkward, don't you think?
All that wondefully rich, warm, aromatic spice of a chai tea latte is also absolutely fabulous in sugar cookie form.
So in working my way through the tea offerings on the coffee shop menu, I stumbled across chai one day. And immediately fell in love.
The flavors of chai are just so rich, warm, and aromatic. And that spice in there that's kind of hard to place? - Well, that's probably cardamom.
And let me tell you, all that wondefully rich, warm, aromatic spice of a chai tea latte is also absolutely fabulous in sugar cookie form.
To make a batch of Chai Sugar Cookies, you start with all the same-ol'-same-ol' stuff you'd think of for a sugar cookie - butter, sugar, eggs, flour, baking soda. The standard cookie ingredient kind of stuff.
But then you add this wonderful combination of spices that makes chai chai - cinnamon, cloves, a touch of black pepper, and my absolute favorite ... cardamom.
If you're not familiar with chai, the spice combination may sound strange. But trust me, it's delicious. Distinctive and hard to describe ... but delicious.
Once the dough is mixed, chill it for a bit in the refrigerator. The chill time prevents the cookies from spreading during baking so they bake up a bit thick and stay tender.

Once chilled, roll the dough into little balls, and dip each dough ball in granulated sugar.
Then bake them up until they've flattened out a good bit but are still puffy, and are just beginning to get very lightly browned in spots.
These cookies bake up pretty quickly - just 6 to 8 minutes in the oven. Be careful not to overbake them, so they keep their soft, tender texture.
Then get ready to dive into the deliciousness and enjoy!

Chai Sugar Cookies

ingredients:
- 2 3/4 c. all-purpose flour
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- 3/4 tsp. ground cardamom
- 3/4 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/4 tsp. salt
- 1/4 tsp. black pepper (I used freshly ground pepper from my pepper mill, but regular ground black pepper works just fine, too)
- 1 c. (2 sticks) butter, softened
- 1 1/2 c. granulated sugar
- 2 eggs
- 1 tsp. pure vanilla extract
- Additional granulated sugar for rolling

How to cook Chai Sugar Cookies
- Mix flour, cream of tartar, baking soda, ground cardamom, cinnamon, cloves, salt, and pepper together in a medium bowl; set aside.
- Beat butter and 1 1/2 cups granulated sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla.
- Gradually add flour mixture, on low speed of mixer, until well mixed.
- Cover and refrigerate about 2 hours, or until dough is firm and easy to handle.
- Shape dough into 1-inch balls; roll each ball in additional sugar. Place balls about 2 inches apart on ungreased baking sheets.
- Bake at 400℉ for 6-8 minutes, or until very lightly browned. Cool on baking sheets 1 minute. Remove to wire rack and cool completely.
