Chocolate Banana Bread
This rich and delicious chocolate banana bread has the perfect soft texture!
Hi friends! I've been slacking off on posting here in the last little while, mostly because my in-laws have been in town visiting us. It has been so fun showing them all around Portland and taking them to some of our favorite places. We've visited our favorite museums, took a road trip to the coast, and have been stuffing our faces at all our favorite restaurants. We've been having such a great time that I haven't cooked much of anything in the last week! A few days ago I noticed some bananas starting to go south, and whipped up a quick loaf of this chocolate banana bread so they wouldn't go to waste. I adapted my favorite best-ever banana bread recipe by throwing in some cocoa powder and chocolate chips, and the result was a deliciously moist and tender loaf with a rich chocolate flavor. It was a huge hit with everyone at my house, and one we will definitely make again!
Chocolate Banana Bread
1 cup sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla
3 tablespoons milk
3 overripe bananas, mashed
1 1/2 cups flour
1/2 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups chocolate chips
Preheat the oven to 325. Grease a 9 x 5 loaf pan and set aside. In a large bowl or the bowl of a stand mixer, cream together the sugar and butter until light and fluffy. Add the eggs, vanilla, milk, and mashed bananas, and mix until smooth. Add the flour, cocoa powder, salt, baking soda, and baking powder, and mix until just combined. Fold in the chocolate chips and pour into the prepared loaf pan. Bake 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
