Chocolate Kahlua Fudge {aka: Coffee, Coffee, Buzz, Buzz, Buzz Fudge!}

Are you familiar with the fabulous Ben & Jerry's Coffee, Coffee BuzzBuzzBuzz!® ice cream flavor? It's extra-coffee flavored ice cream with espresso fudge chunks. Uh, yeh. Can you see how it gets it's name?
Well, I didn't really mean to, ... but I think I kinda created a similar type caffeine-wired-up sweet treat with this Chocolate Kahlua Fudge chocolate fudge loaded with Kahlua, laced with instant coffee granules, and topped with chopped dark chocolate covered espresso beans. Oh my! And it's so good.
Adding the espresso beans was Mom's idea. I wonder if she was channeling thoughts of Coffee, Coffee BuzzBuzzBuzz!® ice cream when that idea came to her. Because I have a kinda funny story about her and Coffee, Coffee BuzzBuzzBuzz!® ...
My dear friend Deb had decided to do something she had always dreamed of doing act in a play. {So proud of her for doing it, by the way! I don't think I could get up on a stage to perform in front of 100s of people to save my life.} My husband, parents, and I all went to see her perform one evening {she did a fantastic job!} ... and after the performance, Deb wanted to go to Ben & Jerry's for ice cream. You can't turn down a star's request for ice cream, right? Of course, it wasn't real tough to convince us.
We piled into Ben & Jerry's just before they closed, and Mom ... being a lover of all coffee flavored sweets ... settled on Coffee, Coffee BuzzBuzzBuzz!® as her ice cream of choice.
Wonderfully great choice for flavor.
Not such a wonderfully great choice for sleep.
After her bowl of ice cream, Mom was so totally wired she was talking a mile a minute. And I don't think she slept a wink that night.
So I just may have recreated Mom's Coffee, Coffee, Buzz, Buzz, Buzz experience here in Chocolate Kahlua Fudge form. The flavor is amazing! ... as is the caffeine jolt it packs.
As my husband suggests, you may want to eat this fudge for breakfast! Not a bad idea. Not bad at all.

Chocolate Kahlua Fudge
Studded with chopped chocolate covered espresso beans and laced with coffee and Kahlua in the fudge, it's truly a chocolate-coffee-Kahlua lover's dream.

ingredients:
- 2 1/2 c. granulated sugar
- 1 c. unsalted butter
- 1/2 c. whole milk
- 1/2 tsp. vanilla extract
- 13 large marshmallows, torn in half
- 1 c. Ghiradelli bittersweet chocolate chips {just over 1/2 of a 10 oz. package}
- 1 c. confectioners sugar
- 1/4 c. + 2 T. Kahlua
- 1 tsp. instant coffee granules
- 1/8 to 1/4 c. dark chocolate covered espresso beans, coarsely chopped
instructions:
How to cook Chocolate Kahlua Fudge
- Line a 9x9" pan, bottom and sides, with foil. Rub foil with butter or lightly spray with nonstick cooking spray.
- In a small bowl, whisk together confectioners sugar, Kahlua, and instant coffee granules. Set aside.
- Place granulated sugar, butter, and milk in a large pot. Bring to a full rolling boil over medium-high heat, stirring constantly. Continue stirring and boil for 3 minutes this is important for the fudge to set up properly, so time it! {Make sure to stir constantly ... and to keep the mixture at a full rolling boil. If the mixture froths up too much, turn the heat down just a little bit. Also, I sometimes lift the pot off the burner, still stirring, for just a second or two.}
- After the 3 minutes, remove from heat. Add vanilla, marshmallows, and chocolate. Stir until marshmallows and chocolate are completely melted and blended into the sugar mixture. Add Kahlua mixture to the pot and stir until blended in.
- Pour into prepared pan and sprinkle top with chopped chocolate covered espresso beans. Lightly press espresso beans into the fudge mixture a bit so they will adhere.
- Refrigerate until fully chilled. Once chilled, cut into to small squares. Store fudge in the refrigerator.
TRACEY'S NOTES
- This is a fairly soft-textured fudge, best enjoyed straight out of the refrigerator or after having only set out for a short time. It still tastes great if it's set out of the refrigerator for a while, but it will leave some chocolate behind on your fingers!
