Cinnamon Syrup is a simple and versatile little syrup you can easily whip up at home. Try it on pancakes, waffles, ice cream, honeydew melon, or anything else your heart desires.
My Vermont friends and readers ... look away! I'm about to talk about a syrup that's not pure Vermont maple syrup.

Ah, it's true. I'm a pure Vermont maple syrup fanatic. I moved away from Vermont to North Carolina 20 years ago, and I still have maple syrup shipped to me from Vermont. Grade B, to be exact. It's the best.
But I also do love cinnamon.

I whipped up a batch. And it smelled soooooooo good.
I could hardly wait to try it.
And let me just tell you, my friends ... It. Is. Yummy.

I could also see it being great on bread pudding. Or waffles. Or cheesecake. Or, or, or ... I think the possibilities are pretty endless.
So if you're a cinnamon fan, I highly recommend giving this versatile little Cinnamon Syrup a try. I know I loved it!

Cinnamon Syrup
- 1 c. granulated sugar
- 1/2 c. light corn syrup
- 1/4 c. water
- 3/4 tsp. ground cinnamon
- small pinch salt
- 1/2 c. evaporated milk
- Combine sugar, corn syrup, water, cinnamon, and salt in a small saucepan. Bring mixture to a boil over medium heat, stirring constantly. Boil for 2 minutes without stirring. Remove from heat and cool for 5 minutes.
- Stir in evaporated milk.
- Serve warm or cold over ice cream, waffles, pancakes, cheesecake, or anything else your heart desires. Store in the refrigerator.
