This Coconut Snowball Cocktail may just be the only way I truly like to enjoy snow.
Sure, I can go for a nice batch of snow cream every now and again, but I actually have to endure a snowstorm to get a bowl of that. This cocktail? ... I can enjoy without enduring any of the actual white fluffy stuff itself.
I grew up in Vermont, where I sure experienced more than my fair share of snow. As a kid, I loved playing in it and didn't seem to mind the seemingly endless mounds of snow we received each winter. Vermont was a wonderful place to grow up, and I wouldn't trade it for the world. We'd play outside, bundled up in snowsuits and snow boots, sledding, building snow forts, and having snowball fights all day long without giving even so much as a second thought to the cold and snow.
We'd return home late in the day, our mittens, hats, and boots caked in clumps of snow. We'd hang our sopping wet clothes by the burning wood stove to dry, and thaw ourselves out over a mug of Mom's hot chocolate, made with her homemade hot chocolate mix, of course.
But as I got older, that tune changed. I became a snow wimp.
And since relocating to North Carolina almost 25 years ago, I truly wouldn't care if I never saw another snowflake again in my life.
And as for snowball fights? The only kind of snowball fight I'd like to be in now is one to see who can drink this Coconut Snowball Cocktail the fastest.
This cocktail gets its coconut yumminess from a combination of coconut rum and cream of coconut. Cream of coconut is the thick, sweetened coconut stuff pictured below that you find in the drink mixers section of the grocery store {NOT coconut milk}. It's got a really prominent sweetened coconut taste ... and brings fabulous flavor to this snowball cocktail.
A coconut rim on the cocktail glass makes this cocktail extra fun. To prepare the rims, dip them in a mixture of powdered sugar and water, and then into shredded sweetened coconut. The coconut will stick and look like pretty little bits of snowflakes on your snowball cocktail.
Mix the coconut rum and cream of coconut together in a cocktail shaker along with some vanilla vodka, cream, and ice. Shake until well mixed and chilled, and then pour into the prepared glass.
And that, my friends, is my kind of snowball. It's the perfect snowball for a snow wimp ... and coconut lover ... like me.

For about 3 cocktails:
Glass rims:
- 2 T. confectioners sugar
- 1 tsp. water
- 3 T. shredded sweetened coconut
Cocktails:
- 6 oz. (3/4 c.) 1/2-&-1/2 or light cream
- 4 oz. (1/2 c.) coconut rum
- 2 oz. (1/4 c.) vanilla vodka
- 2 oz. (1/4 c.) cream of coconut {the thick stuff you find with the drink mixers, NOT coconut milk}
instructions:
How to cook Coconut Snowball Cocktail
Prepare glass rims:
- Place coconut on a small plate and confectioners sugar on a separate small plate.
- Add water to the sugar and mix with a fork until well combined with no lumps.
- Dip the rim of one martini glass in the sugar mixture, ensuring that the entire rim gets well coated. Immediately dip sugared rim in coconut.
- Repeat with remaining martini glasses.
Prepare cocktail:
- Fill a cocktail shaker ¾ full with ice.
- Add 1/2-&-1/2, coconut rum, vanilla vodka, and cream of coconut; shake for about 10 seconds until chilled and well mixed.
- Strain into the prepared glasses.
