I venture to bet we've all had the ever-classic party favorite Sausage Balls sausage, cheese, and baking mix rolled into delicious bite-sized baked-up bites. What's not to love?
I know I certainly can't resist popping these little bites in my mouth whenever and wherever they're served. Which seems to be just about everywhere ... from game day get togethers, to tailgating, to cocktail parties, and even sometimes a group breakfast or brunch.
I've got two "secrets" for you to help bake up moister, more tender Sausage Balls! That's right ... two simple things can help make our beloved Sausage Balls even better.
Since they can be prepared ahead of time, stored in the refrigerator and heated as needed, or frozen to keep for later, our family likes to whip up large batches to have on hand for whenever. We just take a few out and warm them up for snacking when we'd like.
But then, truth be told, sometimes our party-favorite Sausage Balls can be just a wee bit on the dry side. And sometimes they can be just a tad bit tough.
But guess what?
I've got two "secrets" for you to help bake up moister, more tender Sausage Balls!
That's right ... two simple things can help make our beloved Sausage Balls even better.
1. Instead of Sausage Balls ... make Cream Cheese Sausage Balls.
Simply mixing in a block of softened cream cheese does wonders for Sausage Balls' moistness-and-tenderness factor.
The cream cheese doesn't change the flavor of the sausage balls at all. It just combines with the baking mix to create a bit fluffier texture in the baked bites.
2. Grate your own cheddar cheese from a block of cheese instead of buying pre-shredded cheese in the package.
The cheese you grate yourself from a block gets more melty than pre-shredded cheese. Again, this adds to the moist-and-tender factor of the baked sausage balls. So grab that box grater or food processor and grate away on your own!
Since they can be prepared ahead of time, stored in the refrigerator and heated as needed, or frozen to keep for later, our family likes to whip up large batches to have on hand for whenever.
The addition of cream cheese doesn't change the sausage ball preparation method. It's still just as easy to make them as without it!
Simply combine all the ingredients together, and then form the mixture into small balls. Place the balls on a baking sheet ...
And bake them up until the sausage is cooked through and the tasty little bites are a nice golden brown.
Pop them in the refrigerator or freezer to have on hand when you need them. Or ... serve up a platter warm straight from the oven, stand back, and watch them disappear in a flash.

ingredients:
- 1 lb. hot sausage
- 8 oz. cream cheese, softened
- 3 c. Bisquick baking mix
- 1 1/2 c. grated cheddar cheese {grated from the block by hand, not packaged pre-shredded}

How to cook CREAM CHEESE SAUSAGE BALLS
- In a large bowl, mix all ingredients until well combined.
- Form into small balls, about 1-inch in size.
- Place on a foil-lined baking pan lightly sprayed with non-stick cooking spray. Bake at 400 degrees until cooked through and browned, about 20 minutes.
TRACEY'S NOTES
- Cream Cheese Sausage Balls may be made ahead of time and refrigerated or frozen. When ready to serve, thaw {if frozen} and reheat in a 350 degree oven for about 5 minutes.
- For extra kick, add about 2 tablespoons chopped pickled jalapeno.
- For mild Cream Cheese Sausage Balls, use mild sausage instead of hot.
