Well turkey day is over. And now we're left with the quest of what to do to best enjoy all those turkey leftovers.
My favorite way to enjoy leftover turkey is in a good old classic turkey sandwich on white bread, slathered with mayonnaise, and complete with a slice of leftover dressing on top. But you know, a girl can only eat just so many turkey sandwiches.
It's one rich, hearty, flavor-loaded soup ... that's so much "more" than a basic turkey sandwich.
Which leaves the question ... What else can we make to enjoy that leftover Thanksgiving turkey?
I know many of us turn to turkey soup. I use my {Leftover} Rotisserie Chicken Soup recipe to make a super flavorful basic turkey soup.
But sometimes, I want something a little "more" than a basic turkey soup ... and a perfect go-to is this Creamy Turkey Soup with Spinach.

This is one hearty soup ... loaded with noodles, a generous amount of turkey, chopped spinach, and rich creamy broth. Not to mention, it's loaded with flavor, too.
The texture is like a thick, creamy chowder. But if you want it not as thick, just use a little more chicken broth or reduce the amount of flour a tad ... perhaps down from 1/4 cup to 3 tablespoons.
Though, personally, I like this creamy soup nice and thick. It's extra hearty that way.
To make this Creamy Turkey Soup with Spinach, start by simmering together chicken broth, onion, garlic, celery, and carrots to make a flavorful base for the soup.
Once the broth base is ready, add egg noodles and simmer until the noodles are cooked al-dente.
Add in chopped cooked turkey and chopped spinach to finish off this rich, hearty, flavor-loaded soup.
Then, add in the creaminess. Simply shake some milk and all-purpose flour together in a jar and pour into the broth base. Once this is simmered for a few minutes, the flour mixture will nicely thicken up the soup.

ingredients:
- 3 T. butter
- 1 c. chopped carrots {about 2 carrots}
- 1 c. chopped celery {about 2 to 3 stalks}
- 1 large onion, chopped
- 2 cloves garlic, minced
- 5 c. (40 oz.) chicken broth
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. uncooked egg noodles
- 2 c. milk
- 1/4 c. all-purpose flour
- 3 c. chopped cooked turkey
- additional 1 c. milk
- 1 (10 oz.) package frozen chopped spinach, thawed & well-drained
- additional 1/8 to 1/2 tsp. salt

How to cook Creamy Turkey Soup with Spinach
- In a large saucepan or Dutch oven, melt butter. Add carrots, celery, onion, and garlic; cook until tender, about 5-7 minutes.
- Add chicken broth, ½ teaspoon salt, and 1/8 teaspoon pepper. Bring to a boil; reduce heat and simmer, uncovered, for 15 minutes.
- Increase heat to return broth mixture to a slow boil. Add egg noodles; reduce heat to medium and simmer until noodles are al dente, about 5-7 minutes.
- Combine 2 cups milk and flour in a large screw-top jar. Cover and shake well until smooth. Stir into soup. Increase heat back to medium-high; cook and stir until thickened and bubbly, about 8 minutes. Reduce heat to medium.
- Stir in turkey, additional 1 cup milk, and spinach. Cook and stir over medium heat about 5 minutes more until the soup is heated through. Be careful not to let the soup scorch.
- Taste the soup, and add 1/8 teaspoon to up to ½ teaspoon more salt as needed. This additional salt added at the end of the cooking time really brightens up the flavors in this hearty soup.
