I first fell in love with this recipe and pancake-making method about two years ago when we moved to our current house. While in the throes of unpacking and settling in, I had no choice but to rely on easy dishes.

And these fluffy Baked Blueberry Buttermilk Pancakes certainly qualify as an easy recipe.
With this pancake prep method, the batter is poured into a baking dish and cooked hands-off all at once. Which means no flipping involved.
And oh my goodness, baking up a big ol' pan is so much easier than standing at the stove.
Instead of the flipping, you simply cut these baked pancakes into squares to serve them up. Sure, they come out in a thicker piece than "regular" pan-cooked pancakes. But the flavor is spot-on the same.

ingredients:
- 3 c. self-rising flour
- 2 1/2 c. buttermilk
- 2 eggs, lightly beaten
- 1 T. canola oil
- 1 1/2 c. fresh blueberries
instructions:
How to cook Fluffy Baked Blueberry Buttermilk Pancakes
- Place flour, buttermilk, eggs, and oil in a large mixing bowl. Stir until just combined {batter will be lumpy}.
- Gently fold in blueberries. {For visible berries on the top after baking, reserve a handful of blueberries and sprinkle them on top once the batter is in the pan.}
- Place batter in a 9x13" baking dish coated with non-stick cooking spray. Bake at 425 degrees for 25-32 minutes, until puffed up and light golden brown on top.
- Serve warm with maple syrup or cinnamon syrup.
TRACEY'S NOTES
- These reheat well. Simply heat cut squares in the microwave for about 20 to 30 seconds.
