Fudgy Double Chocolate Cookies + 19 Decadent Chocolate Recipes

Okay, friends, hold onto your hats... today is National Chocolate Day! And since it's a national holiday, I'm pretty sure that it's okay to eat as much chocolate as you want. Those are the rules, right? I have to confess that I'm sometimes more of a vanilla girl than a chocolate girl. Whenever we try a new ice cream place or a new cupcake shop, I always feel like I can get a better sense of the quality of the ice cream or cupcakes based on their basic vanilla. My husband thinks that buying vanilla anything is a total waste of time, and he always orders the most decadent, over-the-top, insanely rich, dripping-with-chocolate treat that he can find. It's not that I don't like chocolate, it's just that I want to enjoy it intentionally. I don't want there to be so much of it in my life that it becomes everyday and boring to me. (This does not mean that I don't have those days in which I hide in the bathroom and eat a few handfuls of chocolate chips because I just can't deal with my children for another minute.)
When I do need some chocolate in my life, though, you'd better believe that it's going to be amazing. These cookies came about as a result of an intense chocolate craving, and they are totally loaded with chocolate flavor, top to bottom. The cookies themselves are so soft and rich, and get an extra boost of flavor from two different kinds of cocoa powder. Since I couldn't stop there, I also added chocolate chips to the dough, and sprinkled even more chocolate chips on top. Chocolate perfection!
These cookies were so good that my six year old helped herself to a bite of every. single. cookie. that was sitting on the cooling rack (argh!) and I may have had to eat two of her rejects to make myself feel better. (Okay, it was more like three.) Any plans of sending the extra cookies to work with my husband were completely dashed, so there was nothing for it but to eat them myself. :) You definitely need to try these gorgeous cookies for yourself!
Fudgy Double Chocolate Cookies
1/2 cup butter, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla
1 cup flour
1/4 cup cocoa powder
1/4 cup dark cocoa powder
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cream of tartar
1 cup chocolate chips
Preheat oven to 350. Line a baking sheet with parchment or a silicone baking mat. In a large bowl or the bowl of a stand mixer, cream together butter and sugar until light and fluffy. Beat in egg and vanilla until well blended. In a small bowl, whisk together the flour, cocoa powder, salt, baking powder, baking soda, and cream of tartar. Add the dry ingredients to the wet ingredients and mix until a dough forms. Fold in the chocolate chips. Shape into 12 equal sized balls and place on the prepared baking sheet. Sprinkle each ball with a few extra chocolate chips for a nicer presentation. If your dough is fairly soft, I would recommend chilling it at this point for about 30 minutes. If your dough is thick (like mine was), bake in the preheated oven for exactly 8 minutes. Remove and let cool 5-10 minutes on the baking sheet before removing to a cooling rack. The cookies will look very soft and undercooked when you pull them out, but they will cook more as they cool on the pan.
