I can't be left alone with a bag of potato chips. I swear, they are my snacking kryptonite. There's just something about the crispy-crunch of a potato chip that keeps my hand going back repeatedly into that chip bag for bite-after-wonderful-bite.
My Mom is pretty much the same way.
In fact, both Mom and I have an extra-love for the same type of potato chip ...
... the folded-over-so-they're-extra-thick-and-crunchy ones. Mmmmm ... how I love a folded over chip! You know the ones, right? I remember as a kid, Mom and I both going for those folded chips ... grabbing them as quickly as we could when we'd see one, competing to get their extra-yummy crunchiness. For us, they were the gold stars of the potato chip bag!
Given this love for extra-thick-and-crunchy chips ... combined with the fact that I grew up in New England ... it probably comes as no surprise that Cape Cod Potato Chips are my no-doubt-about-it absolute favorite potato chips. Thick-cut and handmade in small batches on the Cape ... just as when they were made in the original small storefront in Hyannis, Massachusetts ... they are the perfect crispy snack for the crunchy chip lover like me.
I was in grade school in my home-state of Vermont when Cape Cod Potato Chips first started. At that time Cape Cod chips weren't widely distributed, and were available pretty much only on the Cape itself. As they expanded throughout the region, getting your hands on a bag was a huge treat ... and I remember the thicker-cut kettle-cooked chips being like no other chip I had experienced before.
After one bite, this chip lover had a new chip love!
And as much as I love enjoying my favorite Cape Cod Chips straight out of the bag, there's an even cooler way to enjoy them ... one that's just perfect for a party ... or for serving up during the big game ... or for a random Tuesday pairing with a big cold beer ... these Game Day Pub Chips!

To prepare a platter of Pub Chips, lay out Cape Cod Original or Reduced Fat Original Potato Chips on a serving platter and sprinkle on a generous amount of crisp-cooked bacon. Warm the chips in the oven ... and then drizzle them with beer queso ...
Layer on some finely chopped fresh jalapenos, green onion, and diced tomatoes ...
Then get ready to dig in!
And oh. my. word. What an amazing flavor combination it is.
Just as I can't be left alone with a bag of potato chips ... I don't think I can be left alone with a platter of Game Day Pub Chips, either. The crispy-crunch of the chips combined with the fabulous flavors of bacon and queso keep my hand going back repeatedly to that platter, too, ... for bite-after-wonderful-bite.
And see that folded chip on the edge of the platter below? You can bet Mom and I would be racing to grab it and enjoy its amazing extra-crunchiness! I bet I would beat her to it.
Ingredients
- 1 (8.5 oz.) bag Cape Cod® Original or Reduced Fat Original Potato Chips
- 4 slices bacon, cooked crisp & crumbled
- 1 (8 oz.) tub prepared mild queso
- 1 T. beer
- 1 T. finely chopped fresh jalapeno
- 2 T. finely chopped tomatoes, seeds removed
- 2 green onions, chopped
- Place potato chips on a large serving platter {or split equally between two smaller ones}; sprinkle with crumbled bacon. Warm in a preheated 350 degree oven for 3 - 5 minutes.
- Heat prepared queso in the microwave for about 20 - 30 seconds in the microwave. Remove from microwave and stir in beer.
- Drizzle queso over warm potato chips. Sprinkle evenly with jalapeno, green onions, and tomatoes.
- Serve immediately.
