Hey all, summer is upon is!  Oh it's time to celebrate and enjoy all things summery!  Including all the tasty desserts that come along with this fabulous season.

I mean, can you imagine a summer without creamy no-bake favorites like Chocolate Eclair Dessert or classic Oreo icebox dessert?  Or rich-and-delicious homemade chocolate ice cream?

Or how about those tasty desserts like strawberry cobbler or blueberry crisp made with all of summer's delicious fresh fruits?  Oh yes, it just wouldn't be summer at all without these yummy homemade treats.

Seriously, what better way to celebrate all things summer than a delicious cake that screams of tropical island vacations? 

And there's one more favorite of mine that's just perfect for summer this time, a cake.  A cool-and-creamy pineapple and coconut-filled icebox cake, that is.  That just so happens to bear the name of Hawaiian Dream Cake.
Seriously, what better way to celebrate all things summer than a delicious cake that screams of tropical island vacations?

I'm hard-pressed to think of a better more yummy way, for sure.

Hawaiian Dream Cake is one of our absolute family favorites, for sure.

I can remember my Mom making it quite a bit when I was growing up, and I sure loved it every time.  It holds fond memories of summer dinners out on our back deck, where this cake would be the perfect ending to a classic summer cookout meal.

This creamy cake is a layered delight that includes a pineapple-and-coconut laced yellow cake base that's then spread with a layer of creamy pineapple pudding.  Finally, it's all topped with freshly whipped cream and a sprinkling of coconut and chopped pecans.

When mixing the cake batter, use pineapple juice to replace the usual water called for on the box.  And add a little coconut to the batter, too.  These additions will give the cake base wonderful tropical flavor. 

And fortunately, this delight isn't just tasty, it's pretty easy to make, too.

To make this cool-and-creamy cake, start with a prepared yellow cake mix.  When mixing the cake batter, use pineapple juice to replace the usual water called for on the box.  And add a little coconut to the batter, too.  These additions will give the cake base wonderful tropical flavor.

Once the cake is baked and cooled, whip up a creamy mixture of vanilla instant pudding, cream cheese, and crushed pineapple ...


Spread the pineapple pudding mixture evenly over the baked pineapple-and-coconut yellow cake ...

This creamy layer is so good!  And adds such wonderful moistness to the finished cake.

Then grab a pint of whipping cream, add a touch of sugar and vanilla, and whip until it becomes  beautiful freshly-whipped cream ...

Spread the whipped cream on top of the pineapple-pudding layer and sprinkle with coconut and chopped pecans ...

And then you'll be admiring one creamy-and-dreamy layered delight.

While the cake can certainly be served up and enjoyed immediately, Hawaiian Dream Cake is even better when refrigerated overnight to allow the flavors to meld.

Hawaiian Dream Cake

A layered delight with pineapple-and-coconut laced yellow cake base, a layer of creamy pineapple pudding, and freshly whipped cream and coconut topping. Cool, creamy, & comforting!

ingredients:

  • 1 (15.25 oz.) package yellow cake mix + oil & eggs to prepare cake
  • 1 (20 oz.) can crushed pineapple, well-drained & juice reserved
  • 1/3 c. coconut
  • 1 (8 oz.) package cream cheese, softened
  • 1 c. cold milk
  • 1 (3 oz.) package instant vanilla pudding
  • 2 c. whipping or heavy cream
  • 1/4 c. granulated sugar
  • 1 tsp. vanilla extract
  • 2/3 c. coconut
  • 1/4 c. chopped pecans

instructions:

How to cook Hawaiian Dream Cake

  1. Drain pineapple and reserve the juice. Place pineapple in the refrigerator to be used in this recipe later.
  2. Prepare cake as directed on the package, using reserved pineapple juice for the liquid instead of water. Fold 1/3 cup coconut into batter. Bake in a 13x9" pan according to package directions. Once baked, cool cake completely.
  3. Beat softened cream cheese with an electric mixer or stand mixer for about 30 seconds; add milk and beat for another 30 seconds. Add dry pudding mix and beat until well combined and smooth. Fold in drained pineapple.
  4. Spread pineapple pudding mixture evenly on top of the cake.
  5. With clean beaters and bowl, beat whipping cream and vanilla at medium speed until frothy. Gradually add sugar and continue to beat on medium-high speed until soft peaks form. Spread in an even layer on top of pineapple pudding mixture.
  6. Sprinkle top of cake with 2/3 cup coconut and then chopped nuts. Store covered in the refrigerator.
