Homemade Chocolate Marshmallows
Move over regular marshmallows ... and make room for Homemade Chocolate Marshmallows! Whip up a batch of these beauties and you'll be enjoying little pillows of chocolate marshmallow deliciousness.
One of my absolute favorite candy confections to make {and eat, for that matter} is homemade marshmallows. As I shared in my previous post about how to make my favorite Homemade Marshmallows, marshmallows are completely-and-totally worth the homemade time and effort!
Despite there being perfectly-puffy-and-wonderful bags of marshmallow yumminess available for us to easily buy at the store, homemade marshmallows are 142% completely-and-totally worth the homemade effort.
So after making homemade vanilla marshmallows for years, it was only natural that I start to experiment with other flavors, right?
By simply taking the base vanilla homemade marshmallow recipe, adding unsweetened cocoa powder into the mix, and dialing back on the vanilla extract, little pillows of chocolate marshmallow deliciousness were born.
The last time I whipped up a batch of marshmallows, I decided to try my hand at creating flavors other than the standard vanilla. I didn't get too crazy on this first flavor attempt ... choosing to try out chocolate, coconut, peppermint, and a peppermint-chocolate combination.
My results?
Well, the results were mixed.
Coconut I didn't get quite right. They have potential ... but will take quite a bit more work before the flavor is just right.
Peppermint and peppermint-chocolate I got the peppermint flavor too strong. Which is easy to do with peppermint ... you have to be careful. While both peppermint versions were good, I've got to tone it down a bit before those will be ready for prime time.
But the homemade Chocolate Marshmallows? Nailed it!
The chocolate marshmallows were absolutely a winner.

Homemade Chocolate Marshmallows

ingredients:
- 3 envelopes unflavored gelatin
- 1 c. cold water, divided
- 1 1/2 c. granulated sugar
- 1 c. light corn syrup
- 1/4 tsp. kosher salt
- 1/4 c. unsweetened cocoa powder
- 1 T. vanilla extract
- confectioners' sugar + unsweetened cocoa powder mixed together, for dusting

How to cook Homemade Chocolate Marshmallows
- In the bowl of a stand mixer, combine gelatin and 1/2 cup cold water. Allow to sit while you prepare the sugar syrup.
- In a medium saucepan, combine granulated sugar, corn syrup, salt, and remaining 1/2 cup cold water. Cook over medium heat until sugar dissolves, stirring frequently. Raise heat to high and cook until the sugar syrup reaches 240 degrees on a candy thermometer.
- Remove sugar syrup from the heat. With the mixer on low speed and fitted with the whisk attachment, slowly pour sugar syrup into the gelatin. Turn mixer up to high speed and whip until very thick, about 15 minutes. Add cocoa powder and vanilla; mix thoroughly.
- Line the bottom and sides of a 9x13" glass baking dish with plastic wrap. Spray plastic wrap with non-stick cooking spray and dust generously with confectioners' sugar. Pour marshmallow mixture into prepared pan, smooth the top, and dust top with mixture of confectioners' sugar + cocoa powder.
- Allow marshmallows to stand uncovered overnight to dry.
- Turn marshmallows out onto a cutting board. Using a sharp knife, cut marshmallow into 1-inch wide strips. Cut strips into 1-inch squares. Roll cut sides in mixture of confectioners' sugar + cocoa powder.
- Store in an airtight container at room temperature for up to 3 or 4 days. If marshmallows become sticky, remove the container lid for a bit to allow marshmallows to dry.
