While I am certainly not qualified to explain why it's called curd, I certainly can show how to make it and share what the heck to use Lemon Curd for. And, no ... it's indeed not hard to make. Simply cook Lemon Curd slowly and gently to create the perfect smooth and creamy texture. And then from cake filling to cheesecake topping, lemon tarts to ice cream mix-in, and even lemony cocktails ... the ways to enjoy Lemon Curd are endless.
How to Make Lemon Curd
Off the heat, whisk together sugar, some cornstarch, and a touch of salt.
Cook the mixture over medium heat ... whisking constantly to make sure the eggs cook slowly, gently, and free of lumps. the mixture will turn pale yellow and thicken.
Remove from the heat and finish the Lemon Curd with butter and fresh lemon zest.
Chill at least four hours or overnight ... the Lemon Curd will continue to thicken as it cools.

ingredients:
- 1 c. + 2 T. granulated sugar
- 1 T. cornstarch
- 1/8 tsp. salt
- 1 c. fresh lemon juice (approximately 5 lemons)
- 3 large eggs
- 2 T. unsalted butter
- 1 tsp. grated lemon rind
instructions:
How to cook How to Make Lemon Curd
- Combine sugar, cornstarch, and salt in a medium saucepan; stir with a whisk.
- Stir in lemon juice and eggs. Bring to a boil over medium heat, stirring constantly with a whisk.
- Reduce heat; simmer 1 minute or until thick, stirring constantly.
- Remove from heat. Add butter and lemon rind; stir gently until butter melts. Spoon mixture into a bowl; cool.
- Cover and chill at least 6 hours or overnight. Lemon curd will thicken as it cools.
