Marinated Vidalia Onion Salad
Who knew a straight-up onion salad could be so good? You'll be amazed at just how delicious this simple little Marinated Vidalia Onion Salad is!

Is it possible to be an onion addict?
Because I truly think my husband may have a problem ... when it comes to onions, that is. He can {and will} take an onion and eat it like an apple. No joke. And I don't know anyone else who does that.
So that's why I made this Marinated Vidalia Onion
See, this salad is just straight up onions and it's straight up his alley. Seriously though, I love it, too!
You would think that being a straight-up onion salad, it would be harsh and strong ... but it's not. Made with mild, sweet Vidalia onions
Marinating the mild Vidalias make them even more mild and flavorful.
And making this salad is super easy.
Simply combine some vinegar, water, and sugar ...
... and whisk until the sugar dissolves. {See? ... sugar's all gone}
Then thinly slice a couple of Vidalia onions
... separate the circles into rings, and dunk those onion rings into the vinegar-sugar-water marinade.
Let the onions soak up that marinade for several hours. It makes sweet, mild Vidalias even more sweet and mild!
When you're ready to enjoy this Vidalia deliciousness, drain the onions and mix them with just a tiny touch of mayonnaise and some celery seeds.
You'll be amazed at just how delicious this simple little straight-up onion salad is! Even if you're not an onion addict like my hubby.

Marinated Vidalia Onion Salad
Source: A family friend
- 2 medium-sized Vidalia onions
{or other sweet onion}
- 1/2 c. granulated sugar
- 1/4 c. white vinegar
- 1 c. water
- 1 T. mayonnaise
- 1 tsp. celery seeds
Directions
- Thinly slice onions into rings and place in a medium-sized bowl. Combine sugar, vinegar, and water; whisk until sugar dissolves; pour over onions. Cover and chill at least 3 hours or overnight.
- Drain onions. Stir in mayonnaise and celery seeds. Serve as-is or spooned over lettuce leaves.
