Last week's snow storm brought us a tiny bit of snow, and a whole lot of sleet and freezing rain ... which in the South, is even worse than snow. Sleet and freezing rain mean layers of ice on the roads ... Which also means NObody is going ANYwhere for quite some time.
And that's exactly what happened to us.
The storm resulted in us being home bound for a total of six days. Six days. Waiting for the temperatures and sun to turn warm enough to melt away the imprisoning ice.

So what exactly does one do when home bound for six days? I don't know about you, but I for one start to go a bit stir crazy.
And then I bake. Which probably comes as no surprise.
Yes, this cake was one of my please-save-me-from-going-stir-crazy baking projects. And let me just tell you, it is indeed rich and delicious.
To create this little beauty, start with a boxed Devil's Food cake mix and doctor it up a bit. Or, you could make a scratch-made cake with your favorite go-to recipe.
Once the cake is baked in a 9x13" pan, smother it with mini marshmallows as soon as the cake comes out of the oven.
Then pour a rich boiled chocolate icing ... {think Texas Sheet Cake-type icing} ... all over the top, sealing that layer of marshmallows in a coating of chocolate deliciousness.
The marshmallows will melt a bit from the heat of the warm cake below, and rich boiled icing above.
The result?

For the cake:
- 1 (15.25 oz.) package Devil's Food cake mix
- 3/4 c. water
- 3/4 c. canola oil
- 4 large eggs
- 1 (10 oz.) package miniature marshmallows
For the icing:
- 2 c. granulated sugar
- 1/2 c. (1 stick) unsalted butter
- 5 oz. evaporated milk
- 1 (12 oz.) package semi-sweet chocolate chips {2 cups}
- 1 tsp. vanilla extract

How to cook Marshmallow Chocolate Cake
Prepare the cake:
- In a mixing bowl, place cake mix, water, oil, and eggs; beat until well combined. Pour batter into a greased 9x13-inch baking pan.
- Bake at 350 degrees for 30-35 minutes, or until cake tests done with a wooden pick.
- Remove cake from oven and immediately pour marshmallows evenly over the top. Set aside.
Prepare the icing:
- Place butter, sugar, and evaporated milk in a medium-sized saucepan.
- Bring to a boil over medium to medium-high heat, stirring frequently; boil for 30 seconds.
- Remove from heat; add chocolate chips and vanilla extract. Whisk until chocolate chips are melted and icing is thickened and glossy.
- Working quickly, pour over marshmallows and smooth with a rubber spatula.
- Allow to cool completely.
