When it comes to holidays, I generally don't do a whole lot of holiday-specific themed foods. I always have good intentions about getting cute with turkeys at Thanksgiving or bunny-shaped foods at Easter. But somehow, it never actually happens.
The two exceptions?
Christmas and 4th of July red, white, & blue. Now for these two holidays, I always seem to be pretty good at cranking out some holiday-specific themed food.
For the 4th of July, perhaps it's because the red, white, and blue color scheme is so easy to work with?
When served up for your 4th of July festivities, these little beauties will fit right in with the fun and festive red, white, and blue color scheme.
I mean, grab some beautiful red strawberries and plump blue blueberries, and you can build all kinds of fun and festive treats! Like a triple berry red, white & blue punch bowl cake, red, white & blue virgin sangria, or our very favorite red, white & blue Strawberry Cheesecake Bites. All of which are really easy to make.
Or another super easy idea? - These Red White & Blue Mini Cheesecakes. That get their red from dollops of cherry pie filling, white from the cheesecake base, and blue from dollops of blueberry pie filling.
And believe me, when I say super easy, I mean it. Because these mini cheesecakes truly couldn't be any easier to make.
Start by making the cheesecake crusts using a vanilla wafer cookie.
Simply place foil cupcake cups in a muffin pan and place a vanilla wafer cookie in the bottom of each one.

That's it for the crust!
Next, whip up a very simple cheesecake batter.
Combine softened cream cheese, eggs, granulated sugar, and vanilla extract in a mixing bowl. Mix this all together with an electric mixer until there are no lumps.

Then spoon the batter into the prepared foil cupcake liners. I use a large cookie scoop - which makes the process quick and easy.

Once the little cheesecakes cool, the center will sink a bit forming an indentation in the middle. The indentation is just perfect for holding the fruit topping.
Top half of the cheesecakes with cherry pie filling, and the other half with blueberry pie filling.
And that's all there is to making these tasty little cheesecakes - simple ingredients, simple steps, and big cheesecake flavor.

ingredients:
- 12 vanilla wafer cookies (I use Nilla Wafers)
- 2 (8 oz.) packages cream cheese, softened*
- 3/4 c. granulated sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 (21 oz.) can cherry pie filling
- 1 (21 oz.) can blueberry pie filling
instructions:
How to cook Red White & Blue Mini Cheesecakes
- Place softened cream cheese and sugar in a mixing bowl; mix with an electric mixer until just combined. Add eggs and vanilla. Mix until smooth.
- Line the cups of a 12-cup muffin tin with foil cupcake cups. Place a vanilla wafer cookie in the bottom of each cupcake cup.
- Fill each cup 2/3 to ¾-full with cream cheese mixture, dividing the batter evenly between the 12 cups. (I use a large cookie scoop.)
- Bake at 350℉ for 16-18 minutes until set, with just a small bit of wiggle in the center.
- Cool completely.
- Top half of the mini cheesecakes with cherry pie filling and half with blueberry pie filling (you won't use all of the pie filling). Chill. Store in the refrigerator until serving.
TRACEY'S NOTES
- * Use regular cream cheese for the best result. I don't recommend substituting lower-fat cream cheese.
- Strawberry pie filling could be used for the red topping, as well.
