What better way to bring on the good cheer than with a Christmas cocktail named after the jolly old elf himself? With it's coconut rim and bright red color, this Santa's Hat Christmas Cocktail will most certainly bring on the holiday cheer!

With it's coconut rim to simulate the fluffy white trim, bright red color, and triangular shape of the martini glass, this cocktail sure does make you think of Santa's hat.
Well, I guess it's not named after Santa himself, but rather after a part of his ever-classic red suit Santa's hat. And what a fun cocktail it is to help bring on the holiday cheer!
With it's coconut rim to simulate the fluffy white trim, bright red color, and triangular shape of the martini glass, this cocktail sure does make you think of Santa's hat, doesn't it? It's an adorably cute way to serve up holiday cocktails, for sure.
Grenadine also makes this cocktail on the sweet side ... since grenadine itself is quite sweet. I think of the flavor as much like grown-up cranberry Kool-Aid with a coconut flare!
Maraschino cherry juice can also be used instead of the grenadine. The cocktail will just be a little less sweet and a little less bright red than when made with grenadine.
Making a fun and festive Santa's Hat cocktail is really simple.
Start by mixing together some confectioners' sugar and water on a small plate. Then dip the rim of a martini glass in the sugar mixture ... this will act as the glue to adhere the coconut onto the glass's rim.
Immediately while the sugar mixture is still wet, dip the rim in shredded sweetened coconut that's been placed on a separate little plate.
Gently tap the rim of the glass into the coconut if need be to get the coconut to adhere all over the rim.

Then strain into the prepared coconut-rimmed glass.

If you'd like to prepare these for a crowd rather than individually, that's easy too. The cranberry mixture can easily be mixed up ahead of time and refrigerated until serving time.
I've stored the mixture in the refrigerator for up to 2 or 3 days just fine.

Coconut rims for the glasses can be prepared ahead of time, too, and then just set aside. Once the sugar and coconut dry on the rim, the coconut will stay intact as long as the glass isn't messed with much.

Glass rims:
- 2 T. confectioners sugar
- 1 tsp. water
- 3 T. shredded sweetened coconut
Cocktails:
- 6 oz. (3/4 c.) cranberry juice
- 2 oz. (1/4 c.) coconut rum
- 1 oz. (2 T.) grenadine*
- peppermint sticks or candy canes for garnish {optional}

How to cook Santa's Hat Christmas Cocktail
- PREPARE GLASS RIMS: Place coconut on a small plate and confectioners sugar on a separate small plate. Add water to the sugar and mix with a fork until well combined with no lumps. Dip the rim of one martini glass in the sugar mixture, ensuring that the entire rim gets well coated. Immediately dip sugared rim in coconut. Repeat with remaining martini glass.
- PREPARE COCKTAIL: Fill a cocktail shaker ¾ full with ice. Add cranberry juice, coconut rum, and grenadine; shake for about 10 seconds until chilled and well mixed. Strain into the prepared glasses.
- Garnish each cocktail with a peppermint stick or candy cane, if desired.
TRACEY'S NOTES
- This cocktail is on the sweet side (since grenadine is sweet). It's a bit like grown-up cranberry Kool-Aid with a coconut flare.

- The cocktail mixture can be prepared in larger batches in advance and chilled in the refrigerator until serving time. I've stored it in the refrigerator for up to about 2 or 3 days just fine.
- Be aware that the peppermint stick/candy cane garnish will melt into the cocktail and change the taste. I personally think a little of the peppermint in the drink tastes good, but my husband absolutely doesn't like it at all (he's not a peppermint fan). If you're not a peppermint fan, I recommend leaving off the garnish.
