Sparkling Mint Juleps

Whipping up these tasty little jules ... er, jewels, ... is easy. Simply combine a bit of bourbon, a bit of simple syrup, and a few fresh mint leaves in a sturdy glass ...

... and crush them together with a spoon {or a muddler, if you have one ... which I don't.}

Then strain the bourbon-mint mixture into a flute ...

... and fill the remainder of the flute with Prosecco. Then get ready to sip away at the delicious bourbon-y bubbles. Mmmmmmm. Bubbles. Who doesn't love bubbles?

Sparkling Mint Julep

Ingredients

3 large mint leaves
2 tsp. simple syrup*
2 T. bourbon
4 oz. chilled Prosecco {or other sparkling wine}
additional mint leaf for garnish {optional}

Directions

Place mint leaves, simple syrup, and bourbon in a sturdy glass. Muddle well by repeatedly pressing down on and crushing the mint leaves with a muddler or the back of a sturdy spoon. Be sure to thoroughly crush the mint leaves.
Strain the bourbon mixture into a chilled champagne flute. Gently pour in Prosecco.
Garnish with a mint leaf, if desired.

Makes 1 cocktail.

* To make simple syrup, place equal parts water and granulated sugar in a saucepan {I usually do 1/2 cup water and 1/2 cup sugar}. Heat over medium heat, stirring, until sugar is completely dissolved. Cool.
