Thai Peanut Noodles
These thai peanut noodles are a savory and flavorful 30 minute meal that the whole family will love!
You know those nights when nothing sounds good, you're short on groceries, and you can't think what to make for dinner? These thai peanut noodles are your answer! They're ready in less than thirty minutes, deliciously flavorful, and kid-friendly. They are one of the most frequently cooked meals at my house, and my twelve year old can even make them herself. We always have the ingredients on hand in the pantry and fridge, so they're perfect for nights when I don't feel like cooking.
The peanut sauce for these noodles is so simple and flavorful, and throwing in some rotisserie chicken adds some protein and balances it out into a full meal. We like to serve it with sautéed fresh vegetables on the side for an easy and delicious dinner. My kids call these "peanut butter noodles" and gobble them up whenever I serve them. If you like things spicy, you can add a little more (or a lot more) sriracha, but my kids are wimps about spicy foods so we usually stick with about half a teaspoon. These noodles make great leftovers, so I often double the recipe and portion them out for lunches during the week. They are so good!
Thai Peanut Noodles
for the noodles:
8 ounces linguine noodles
1/2 cup chicken broth
3 tablespoons peanut butter
1/2 teaspoon sriracha
1 1/2 tablespoons honey
3 tablespoons soy sauce
1/2 teaspoon ginger
2 teaspoons minced garlic
2 cups shredded rotisserie chicken
for topping:
chopped green onions
chopped peanuts
fresh limes (optional)
Cook the pasta according to package directions. While the pasta is cooking, in a small sauce pan, whisk together the chicken broth, peanut butter, sriracha, honey, soy sauce, ginger, and garlic. Heat until warm and slightly thickened, then stir in the rotisserie chicken and set aside. Toss the sauce with cooked pasta. Sprinkle with green onions and peanuts, and a squeeze of lime juice.
