Have you ever tried a waffle grilled cheese sandwich before? The idea had never really occurred to me before last summer, when we visited the absolute cutest restaurant, Sugarpine Drive-In. It's in the Columbia River Gorge, and has fantastic, carefully crafted food and unique and delicious ice cream. My kids ordered a waffle grilled cheese to share (one of their signatures) and couldn't stop raving about its deliciousness! All of the food we tried was totally amazing (I still think about that ice cream daily) but my kids have still been talking about that grilled cheese, all of these months later. Since I can't make the drive all the way out to the gorge every day, I decided it would be fun to make my own version of the sandwich at home. It's a little simpler than the original sandwich, but it turned out so good!

My kids were thrilled that we were able to make their favorite sandwiches at home! I was pretty impressed by how crispy the crust got, while the cheese inside was gooey and melty and perfect. The best part is that the sandwiches were super simple and quick to make, so they can be a regular part of our menu!

These sandwiches are pretty simple to make, but here are a few tips that made them work well for me. First, I think it's important to combine a harder cheese and a softer/meltier cheese for the best results. I used cheddar and mozzarella, but I think gruyere, muenster, fontina, and/or monterey jack would all be delicious. Second, make sure you've got some good sturdy bread. I used my favorite Tuscan Pane from Trader Joe's (I mentioned it previously in this post, and I love it!), but you could use whatever type of bread you like, as long as you can fit at least two slices of it in your waffle iron.

As you can see, I may have added a little too much cheese to my sandwiches. (Although, really, is there any such thing as too much cheese? I don't believe it.) As you can see, it spilled out of the edges a little bit, but that gave me the bonus of some delicious extra crispy toasted cheese around the edges. I was using the very last of my bread loaf, so my slices were a little smaller than usual, but I think the amount of cheese would have been perfect if the slices were regular size.

I served these sandwiches with some homemade tomato basil parmesan soup on the side for dipping, and it was a match made in heaven! Tomato soup and grilled cheese is a classic combination for good reason. Now that I've shown my kids that I can make their favorite sandwich at home, I don't think they'll want grilled cheese any other way. Give these sandwiches a try, and I'm sure you'll love them too!

Waffle Grilled Cheese

4 thick slices of french bread or italian bread
2 tablespoons butter
2 thick slices of cheddar cheese
1/2 cup shredded mozzarella cheese

Preheat a waffle iron. Spread the butter on one side of each slice of bread. Place two slices of the bread butter side down and put a slice of cheddar cheese on top of each slice. Divide the mozzarella cheese between the two slices. Place the two remaining slices of bread on top, butter side up, Carefully move both sandwiches to the preheated waffle iron and close the lid of the waffle iron. Cook 3-4 minutes, until crisp and golden brown. Serve immediately.
