I was first introduced to this recipe by my mother-in-law. Until recently, she prepared our family Christmas dinner every year. And every year, this 7-Up Cranberry Jello Salad was part of the Christmas dinner line-up.

Start by dissolving 2 small packages of raspberry flavored Jello in a 9x13-inch baking dish. But you don't just dissolve the Jello with water. -- Instead, you use a mixture of boiling water and 7-Up soda.
Once the raspberry Jello is dissolved, stir in 2 cans of whole-berry cranberry sauce, crushed pineapple, and some chopped pecans for crunch.
The 7-Up adds a nice little extra boost of sweetness and flavor to the Jello base. Sprite or any other lemon-lime soda can be substituted, if you'd like.

Sprinkle chopped pecans on top. Or, decoratively arrange some unchopped pecan halves on top, if you'd prefer.
This adds another element of crunch to the salad, as well as adds some decoration to the top.
Refrigerate the prepared Jello salad overnight to give it time to set up fully.

Cranberry Jello Layer:
- 1 c. 7-up soda
- 1 c. boiling water
- 2 ( 3 oz.) packages raspberry Jell-o
- 2 (14 oz.) cans whole berry cranberry sauce
- 1 (20 oz.) can crushed pineapple, drained (BUT reserve the juice)
- 1 c. chopped pecans
Topping:
- 1 (8 oz.) package cream cheese, softened
- 1 T. granulated sugar
- 1/4 c. pineapple juice (reserved from draining the can of crushed pineapple)
- about 1/4 c. pecan pieces and/or chopped pecans

How to cook 7-Up Cranberry Jello Salad
Prepare the Cranberry Jello Layer:
- Place Jello in a 9x13-inch baking dish.
- In a saucepan, bring 7-Up and water to a boil. Carefully pour into the baking dish with the Jello. Use a whisk or fork to whisk hot liquid and Jello together until Jello is completely dissolved.
- Stir in cranberry sauce. Then add pineapple and chopped pecans; stir until well combined.
- Refrigerate and allow to set, about 2-3 hours.
Prepare the Topping:
- Once the Jello is set, use an electric mixer to cream together the softened cream cheese, sugar, and reserved pineapple juice until combined and smooth.
- Spread topping evenly over Jello layer. Sprinkle with pecans.
- Cover and refrigerator overnight to allow to set completely.
TRACEY'S NOTES:
- This recipe can easily be halved and prepared in an 8x8-inch baking dish if you'd like a smaller amount.
- Sprite or other lemon-lime soda can be substituted for the 7-Up.
