When I make chocolate chip cookies ... whether it be plain old basic ones, tasty pretzel chocolate chip cookies, the more unconventional pretzel chocolate-peanut butter chip cookies, or my all-time favorite cherry chocolate chip cookies, ... it's actually not the cookies I love most.

No, truth be told, my favorite part of making chocolate chip cookies is eating the dough.

I know many of us are suckers for chocolate chip cookie dough.  Myself included.  I've even been known to make a batch of chocolate chip cookies solely so I could indulge in the dough, and then not eat a single one of the finished baked cookies ... passing those off to my husband to enjoy all on his own.

Not that that was a task he minded at all.

With its layer of creamy eggless cookie dough sandwiched between two layers of chocolate, it's a fabulous way to enjoy the concept of truffles without all the truffle preparation fuss.

So it's probably no surprise that one of my favorites candy treats to enjoy is chocolate chip cookie dough truffles.  Little balls of safe-for-eating eggless cookie dough dunked and coated in chocolate ... there's just not better for us cookie dough lovers.

But ohhhh, truffles are so tedious to make, aren't they?  Those of you who've made truffles before know exactly what I'm talking about.

The rolling of the dough centers ... the chilling after the rolling ... all the melting ... all the dunking ... and all the dripping.  Not to mention, the challenge of keeping the melted chocolate at just the right temperature and consistency throughout the dunking process.

It can certainly be a fun little project, but albeit tedious for sure.

Enter an easier way to enjoy the truffle concept and flavor without all the tedious steps ... this super easy Chocolate Chip Cookie Dough Bark.

With this easy-to-assemble Chocolate Chip Cookie Dough Bark, a layer of creamy eggless cookie dough is sandwiched between two thin layers of chocolate coating.

Once set, the bark is cut into small squares, achieving the same taste as truffles ... without all the preparation fuss.

And let me just tell you, this bark received absolutely rave reviews from the family and the neighbors we shared it with.  I've already been begged by our little one to make another pan!

Then melt half of a 20-ounce package of chocolate almond bark coating according to its package directions.  Pour the melted chocolate onto the parchment in the prepared pan.

Lining the pan with parchment paper or wax paper keeps the chocolate from sticking to the pan and makes it easier to get the finished set bark out of the pan.

Use an offset spatula or a butter knife to spread the chocolate into a thin even layer.

Keep gently pushing the chocolate out and spreading it until it's to within about 1/2-inch of the sides of the pan, almost completely filling the pan.

Watch for spots that get super thin if you can see the parchment paper through the layer of chocolate, spread a little more chocolate back into that area.

Refrigerate the pan for about 20 minutes to fully set the bottom chocolate layer.

Once the bottom chocolate layer is hardened and set, drop spoonfuls of chocolate chip cookie dough onto the chocolate.

{Note:  The dough in the next couple photos below is actually sugar cookie dough.  I forgot to take photos of these steps when making this Chocolate Chip Cookie Dough Bark.  Oops!  So I'm using photos from my Sugar Cookie Dough Bark photo shoot so you can still see what the steps look like.}

Use your fingers and the palm of your hand to gently spread the cookie dough into an even layer, covering the entire surface of the chocolate.

It doesn't have to be perfectly smooth ... just do your best to get it pretty close to an even thickness across the whole pan.

Melt the remaining half of the package of almond bark and pour it onto the cookie dough layer. 

Use an offset spatula or butter knife to spread the chocolate into a thin even layer, spreading to cover the entire surface of the cookie dough.

To decorate the bark, drizzle the top with some melted chocolate or candy melts.  You can use white, milk, or dark chocolate ... just depending on what color you want your decorative drizzle to be.

For the pan in these photos, I used white chocolate candy melts with just a tiny bit of milk chocolate added in to make the drizzle a very light tan color.  I just wanted to take away the stark whiteness of the white chocolate for my drizzle.

I find using a disposable zip-top baggie is the easiest way to do the drizzle.  It also means no clean-up just throw the baggie away when you're done.  Bonus.

To do the drizzle with a baggie, place the candy melts in a zip-top sandwich bag on a microwave safe dish. Heat in 20 second intervals until melted, kneading after each heating. 

Then using scissors, snip a very tiny hole in one corner of the bag. The smaller your cut, the smaller the thickness of the drizzle. 

Then very gently squeeze the melted chocolate through the hole in the bag to drizzle the melted candy coating back and forth over the bark.

Let the bark set completely.  You can pop the pan in the refrigerator if you'd like to speed this process along.  

Then once set, cut or break the Chocolate Chip Cookie Dough Bark into small pieces and enjoy!

  • 1 c. unsalted butter, at room temperature
  • 3/4 c. granulated sugar
  • 3/4 c. brown sugar
  • 1/4 c. water
  • 1 tsp. vanilla extract
  • 2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 c. (about 6 oz.) mini chocolate chips
To Assemble the Bark:
  • 1 (20 oz.) package chocolate almond bark coating
  • about 2 oz. white or milk chocolate candy melts, for decorative drizzle
  • 1/2 tsp. shortening {optional; this helps the melted candy melts drizzle more easily}

  1. FOR THE COOKIE DOUGH: In a large bowl combine butter, sugar, brown sugar, and vanilla; beat until creamy. Beat in water. Combine flour and salt. Add flour mixture to butter/sugar mixture; mix well. Stir in chocolate chips. Set aside.
  2. TO ASSEMBLE THE BARK: Line a 10x15” jelly roll pan with parchment paper or wax paper. Set aside.
  3. Chop ½ of the package of chocolate almond bark coating into small pieces and place in a bowl. Melt the almond bark in the microwave per its package directions (typically in 30 to 45 second intervals, stirring in between).
  4. Pour melted chocolate onto the prepared parchment-lined pan. Use an offset spatula (or butter knife) to spread the chocolate into a thin even layer, spreading to within about 1/2-inch of the sides of the pan. Refrigerate pan for about 20 minutes to fully set the bottom chocolate layer.
