I was first introduced to this tasty Cheerwine Chocolate Cake several years ago by my sweet friend Jenny. On my birthday she surprised me by showing up with a pan full of this cake, all ready for me to dig into ... along with a beautiful handwritten copy of the recipe, too.

But what exactly is Cheerwine, you ask?

If you're not familiar with it (and if you're not from the South, there's a good chance you're not!), Cheerwine is a classic Southern cherry-flavored soda made in North Carolina. It's reminiscent of Dr. Pepper, but with a more pronounced cherry flavor and deeper burgundy color.
Contrary to its name, Cheerwine is non-alcoholic. It's indeed a soft drink that has absolutely zero to do with wine.
And let me just say, when you combine Cheerwine with chocolate in cake form, the result is amazingly tasty.
As an added bonus to its fun flavor, Cheerwine Chocolate Cake is super easy to make.
The cake itself starts with boxed Devil's Food cake mix. Cheerwine and almond extract are added to give the cake its characteristic cherry-almond flavor.
Simply prepare the cake batter according to the cake mix directions, except add in a teaspoon of almond extract and replace the water called for on the cake mix package with Cheerwine instead.
Then bake the cake up in a 9x13-inch pan to make a sheet cake.
Once the cake has cooled, make a simple Cheerwine-laced chocolate boiled icing to pour on top of the cake.
In a saucepan, combine butter, powdered sugar, cocoa, almond extract, and more Cheerwine ...
Bring the mixture to a boil over medium to medium-high heat, and boil it for about one minute. Stir it constantly to make sure it doesn't burn or stick to the bottom of the pan.
Remove the icing from the heat and let it cool in the pan for 25 minutes so it's not piping hot and thickens up just a little bit.
Once the cake has cooled, make a simple Cheerwine-laced chocolate boiled icing to pour on top of the cake.
Then, pour the warm icing all over the top of the cake.
If needed, gently spread the icing with an offset spatula to completely cover the top of the cake. Do this quickly, though, because the icing cools and begins to set really quickly. Once it starts to set, the icing will get crackly and kind of "ugly" looking if you mess with it.
The chopped pecans are optional and can certainly be left off if you're not a fan of nuts. But they do add a nice look and a little bite of texture to the finished cake.
That's all there is to making this Cheerwine Chocolate Cake. Super easy, indeed.

Cake:
- 1 (15.25 oz.) package Devil’s Food cake mix + eggs and oil to prepare cake, per cake mix package directions
- Cheerwine
- 1 tsp. almond extract
Icing:
- 2 ½ c. confectioners sugar
- 1/2 c. butter
- 1/3 c. Cheerwine
- 1/4 c. cocoa
- 1/4 tsp. almond extract
- about 1/3 c. chopped pecans

How to cook Cheerwine Chocolate Cake
- CAKE: In a mixing bowl, place cake mix and preparation ingredients noted on the cake mix package, replacing the water with Cheerwine. Add 1 teaspoon almond extract. Mix together and bake as directed on the cake mix package in a 9x13-inch pan.
- Set baked cake aside to cool.
- ICING: Melt butter in a saucepan. Add powdered sugar, 1/3 cup Cheerwine, cocoa, and ¼ teaspoon almond extract. Stir together and bring to a boil over medium to medium-high heat, stirring very frequently. Reduce heat slightly and boil for 1 minute, stirring constantly.
- Remove from heat and allow to cool for 25 minutes.
- Pour the warm icing over the cake, spreading as needed to evenly cover the cake. Immediately sprinkle with chopped pecans.
