My husband is a dill pickle addict. And, honestly, I'm not too far behind him on that. We both adore them. And these cute and crunchy little Dill Pickle Bites are such a fun and tasty way to enjoy them!
I had these for the first time about three years ago when someone brought a big platter of them to school for us teachers to snack on. I had no idea what they were, except that there was a pickle in the middle. And there's no way I can resist a dill pickle, so I just had to give them a try.
Addictively good.
Even if you're not a dill pickle addict.
Since the hubby and I are both dill pickle addicts, we obviously love these Dill Pickle Bites.
We also love them with a little twist to the original ... adding a layer of salami wrapped around the pickle, which was inspired by my Mom.
As a little snack when I was growing up, my Mom used to spread a bit of cream cheese on slices of salami and roll them up. I loved these little quick Salami & Cream Cheese Bites! Based on that snack, I figured why not try salami in these dill pickle bites?

Whipping up Dill Pickle Bites is pretty easy, too. Who doesn't love a little bite that's both tasty and easy, right?
Start by mixing up a cream cheese filling flavored with a bit of dill and grated onion. I find the easiest way to grate onion is with a rasp grater that I place right over the bowl. If you don't have a rasp grater, a regular cheese grater will work.
Cut the crusts off slices of white bread {I used whole wheat white}, and roll the bread flat with a rolling pin. Then spread it with the cream cheese mixture, and place a baby kosher dill pickle smack in the middle.
Then roll the pickle up all snug and cozy.

Dill Pickle Bites

ingredients:
- 1 (8 oz.) package cream cheese, softened
- 2 T. mayonnaise
- 1 T. grated onion
- 1/2 tsp. dried dill weed
- 1/8 tsp. ground black pepper
- 12 baby dill pickles
- 12 slices white bread {or white whole wheat}
- Hard salami slices {optional}
instructions:
How to cook Dill Pickle Bites
- In a small mixing bowl, combine cream cheese, mayonnaise, grated onion, dill weed, and pepper. Mix until well combined.
- Cut crusts from bread slices and roll each slice flat with a rolling pin. Spread cream cheese mixture thinly on the bread slices, using approximately one tablespoon mixture per bread slice. Place a baby dill pickle on each and roll up.*
- Place seam side down in a glass baking dish. Cover and chill in the refrigerator 8 hours, or overnight.
- To serve, cut each pickle roll into three pieces.
TRACEY'S NOTES
- *If using hard salami slices, spread about 1/2 T. cream cheese mixture on a bread slice, top with a slice of hard salami, and spread with remaining 1/2 T. cream cheese mixture. Place the baby dill pickle on top of the second layer of cream cheese mixture, and roll up.
