Easy Watermelon Mojito

But you know how when you cut up a watermelon, all that juice collects on the cutting board and in the bottom of the bowl where the pieces are? It sure seems a shame to waste all that delicious juice, don't you think?
Enter ... this easy Watermelon Mojito recipe.
Because with that tasty watermelon juice and this easy recipe, you can quickly be enjoying a super refreshing and delicious watermelon cocktail. All with something we typically disregard.
All it takes to make these Watermelon Mojitos is combining the usual mojito ingredients of fresh mint, fresh lime juice, and rum with a few ounces of watermelon juice. Simply muddle {squish} mint leaves in a glass with some fresh lime juice and touch of granulated sugar. Then add rum and watermelon juice, and top it all off with a splash of club soda.
Super easy!
Now, if you'd like to make a bigger batch of these tasty Watermelon Mojitos, you'll need a bigger "batch" of juice than what collects from cutting up a watermelon. But not to worry "making" watermelon juice is easy, too. Simply place 3 to 4 cups of cubed watermelon chunks in a food processor and give them a whirl for a few seconds. Strain the puree through a colander to remove the pulp, and reserve the juice. You'll have a couple cups of juice to work with.
But believe me, whether you make this easy Watermelon Mojito cocktail in a large batch or a small batch for one or two, one thing's for sure it'll certainly be a tasty way to enjoy that summer watermelon.

ingredients:
- 8 fresh mint leaves
- 1 lime, juiced
- 1 tsp. granulated sugar
- 5 oz. watermelon juice* {I save the juice "drippings" from when I cut up a whole watermelon}
- 3 oz. white rum
- about 3 oz. club soda or sparkling water
- lime wedges, mint, and watermelon wedges for garnish, if desired

How to cook Easy Watermelon Mojito
- Place mint leaves, granulated sugar, and lime juice in a tall sturdy highball glass. With a wooden muddler or the back of a sturdy spoon, press and gently twist the mint leaves against the side of the glass. {Stop muddling when the mint is bruised and fragrant, but not yet torn, as tearing the mint too much can create a bitter taste.}
- Add watermelon juice and rum. Fill the glass 3/4 full with ice cubes or crushed ice. Fill the remainder of the glass with sparkling water or club soda. Stir thoroughly.
- Garnish with lime wedges, mint, and a watermelon wedge if desired, serve, and enjoy.

- * Save the juice "drippings" from cutting up a whole watermelon. Or, to make a larger amount of watermelon juice, place about 3 to 4 cups cubed watermelon in a food processor and pulse. Strain through colander to remove the pulp, reserving the juice.
