Watermelon Rum Slush

It's summertime.  And you know one thing summer means to me?  Watermelon time!  Watermelon is one of my absolute favorite things to eat ... and I swear, I could enjoy it every day.

Now, I know I don't need to dwell on the nutritional benefits of watermelon.  We all know it's not only tasty, but also low in calories, great for staying hydrated in summer's heat, sodium and fat free, and contains lots of great nutrients like vitamins A and C, right?

But did you know that 100% of the watermelon is edible and usable?

When many of us think of enjoying watermelon, we think solely of enjoying the flesh.  Whether it be in the summer-staple fresh-cut wedge, or in other creative watermelon recipes like salads or salsas, eating the flesh is certainly a favorite way to enjoy watermelon's juicy deliciousness.

But how about that rind and juice?

Oh, there are many wonderful ways to enjoy each of these, too.  And to celebrate July as National Watermelon Month, the National Watermelon Promotion Board is challenging watermelon lovers to use the whole  watermelon flesh, juice AND rind!

Grab some watermelon juice and rum to whip up this fun Watermelon Rum Slush

When I was challenged by the National Watermelon Promotion Board to create a recipe featuring one of the components of the whole watermelon, my mind immediately went to featuring watermelon juice.  There are so many wonderful ways to enjoy watermelon juice in refreshing summer drinks like lemonades, infused waters, margaritas, and even an easy watermelon mojito.  

But my absolute favorite way to enjoy watermelon juice is as a frozen slush.  So I turned to a watermelon-Moscato slush I shared a few years back as inspiration for this tasty and refreshing Watermelon Rum Slush I'm sharing with you today.

 And believe me, making this slush truly couldn't be any easier.  All you need to do is mix up watermelon juice with rum and a few simple ingredients, and freeze it.  So easy, right?

Now when I cut up a whole watermelon, I take any juice that collects in the bottom of my watermelon-chunks' bowl and that spills out onto my cutting board and save it you can collect up to about 2 cups of juice this way.  We then either drink it as-is as watermelon juice, or use it in cocktails or to add a jolt of watermelon flavor to a glass of lemonade.

If you're making a batch of this slush though, that collected juice is a great start ... but it won't be enough.  Fortunately, preparing watermelon juice is super easy.  {And an especially fabulous way to use an overripe watermelon, if you happen to end up with one, instead of tossing it out.}

To prepare watermelon juice {and hence, the base of this Watermelon Rum Slush}, simply toss cubed watermelon into a food processor or blender and give them a whirl ...

Then pour the watermelon puree through a strainer to remove the pulp, reserving the juice.  

For the slush, mix the juice with rum, some sugar, and a bit of fresh lemon juice and freeze.

Once the mixture is frozen, the Watermelon Rum Slush is ready to be scooped out into a glass, topped off with a bit of lemon-lime soda, and enjoyed.  

And oh, what tasty refreshing watermelon enjoyment it is!  In my opinion, it's the most perfect way to enjoy watermelon juice.  Just pass a straw!

Watermelon Rum Slush

Grab some watermelon juice and rum to whip up this fun, tasty, and refreshing Watermelon Rum Slush it may just be the perfect summer sipper.

ingredients:

  • 6 c. watermelon cubes, seeds removed*
  • 1/4 c. granulated sugar
  • 1 T. freshly squeezed lemon juice
  • 1 c. white rum
  • 7-Up or Sprite for serving

instructions:

How to cook Watermelon Rum Slush

  1. Place watermelon cubes in a food processor or blender. Blend until smooth. Place a strainer over a large bowl or 9x13-inch glass baking dish. Pour processed watermelon through the strainer to remove the pulp, reserving the strained juice.
  2. Stir granulated sugar and lemon juice into the watermelon juice until the sugar is fully dissolved. Stir in rum.
  3. Place the bowl or baking dish in the freezer and freeze the mixture for 2 to 3 hours, stirring with a fork every 45 minutes or so to break up ice crystals.
  4. When ready to serve, spoon watermelon-rum slush into a glass, filling the glass about 3/4 full. Pour in a little 7-Up or Sprite and stir. Garnish as desired.

  1. * Six cups watermelon cubes, pureed and strained, yields about 4 cups watermelon juice. You can use watermelon juice released and collected when cutting up a whole watermelon instead, for all or part of the pureed juice.
