Eggs Benedict Casserole
This delicious and savory eggs benedict casserole is the perfect special occasion breakfast!
Okay, I know Easter was a couple of weeks ago, but let me tell you the story of my Easter. My husband was scheduled to work both the night before and the night of, so I knew any festivities we were going to have would be solely on my shoulders. Instead of being lazy (like I usually am) I decided to go for it and make it a really fun day. I carefully chose some special things for the girls' Easter baskets, I set up an egg hunt for them in our basement play room, and I hid scavenger hunt clues all over the house to lead them to their baskets. I also dreamed up this amazing eggs benedict casserole to have for breakfast, envisioning us happily munching as a family after enjoying a fun egg hunt in the morning.
I stayed up way too late the night before getting everything ready (although that may have also been because I was binge watching 13 Reasons Why on Netflix...) and then woke up at the crack of dawn to get breakfast ready before my husband got home from work at 7:30. I was really surprised to find that my girls (who are impossible to pull out of bed on school days) were up and bouncing around the house at 6:45 a.m. And then I saw that they had already cracked open the carefully hidden Easter eggs and helped themselves to the candy inside, as well as finding my oldest's Easter basket. I just stood there, mouth open, shocked that all of my hard work was basically for nothing. I had been so looking forward to their delighted faces! It didn't help that they were in a rotten mood all day, after starting the day by shoving gobs of candy into their little faces.
The one thing that went right that morning, though, was this eggs benedict casserole. It came out of the oven crisp on top, tender and savory in the middle, and smelling heavenly. We all enjoyed a nice breakfast together before my husband went to sleep, and it definitely went a long way toward cheering me up. Now that a few weeks have passed, I'm starting to be able to laugh about the whole thing (instead of crying) and it's probably a story I'll tell at their weddings. I think the lesson I've learned is that while Easter egg hunts come and go, eggs benedict casserole is forever. :) We will definitely be enjoying this for every special occasion from here on out!
Eggs Benedict Casserole
9 english muffins, cut into 1 inch cubes
6 ounces canadian bacon, chopped
8 eggs
2 cups milk
1/2 cup half and half
1 teaspoon salt
1/2 teaspoon pepper
1 packet hollandaise sauce mix, prepared according to package directions
Grease a 9 x 13 baking dish. Place the english muffins and canadian bacon in the baking dish and toss to mix. In a medium bowl, whisk together the eggs, milk, half and half, salt, and pepper. Pour the egg mixture over the bread and toss to coat. Cover and refrigerate at least two hours, up to overnight. When ready to bake, preheat the oven to 350. Bake 45-55 minutes, or until golden brown on top and the casserole only jiggles slightly when shaken. During the last ten minutes of baking time, prepare the hollandaise sauce. Serve warm, drizzled with sauce.
