Hello everyone! I hope you all had a great holiday, filled with love and joy and delicious food! As fun as Christmas has been, I think the week between Christmas and New Years is pretty fantastic too. It's a time to get organized, to set goals, and to make plans. We have some big plans for the new year, including (hopefully!) buying our first home, and I'm totally in that goal-setting mood right now. We're still working on saving up for our down payment, so every dollar we can save makes a big difference. One of the most obvious ways to cut down on our monthly expenses is to decrease the amount that we are spending on food, which means eating at home most of the time, and finding ways to save at the grocery store. I started buying meat in bulk a few months ago, and it has made a huge difference in our grocery budget! Not only is it about half of the price I would pay at the grocery store, it's also really good quality. I've been buying giant boxes of chicken breasts for the last six months or so, but a few weeks ago I bought my first box of ground beef. I didn't grow up eating a lot of ground beef (I can probably count on one hand the number of times my mom bought it when I was a kid) so I'm still learning the ins and outs of cooking it. My family has been loving simple casseroles lately, so I thought it would be fun to try a hamburger stroganoff. My kids totally loved it! They even asked if they could have it in their school lunches the next day, which is always the mark of a great meal. This stroganoff is definitely not the fanciest meal in the world, but it's easy, tasty, and inexpensive. We paired it with some steamed broccoli and sliced apples on the side, and it was a great meal!

Simple Hamburger Stroganoff
1 pound lean ground beef
1 medium onion, chopped
1 package (8 ounces) button mushrooms, sliced
3 tablespoons flour
2 cups beef broth
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup sour cream
1 package (12 ounces) egg noodles, cooked according to package directions
Heat a large skillet over medium heat. Brown the ground beef, breaking into smaller pieces with a spatula, until cooked through. Drain the grease, then add the onion and mushrooms to the skillet. Cook until the onions are translucent and the mushrooms are softened. Add the flour and stir to combine. Allow to cook for 1-2 minutes. Slowly add the beef broth, stirring constantly to prevent lumps. Add the Worcestershire, salt and pepper, and stir to combine. Bring to a simmer and cook 10 minutes, or until thickened. Remove from heat and stir in the sour cream. Add the egg noodles to the skillet and stir to combine. Serve hot.
