Fresh Cucumber Pickles {a.k.a. Refrigerator Pickles}

Fresh garden produce time is in full swing here in the Carolinas. And I'm lovin' the bounty I'm scoring from friends' and family member's gardens! The other day I came home from my parents' house with about 2 pounds of freshly-picked green beans, some summer squash, all kinds of fresh herbs, and ... one of my absolute favorites ... freshly picked garden cucumbers. I was in fresh produce heaven.
These pickles are made super easily in the refrigerator. With just cucumbers, a bit of apple cider vinegar, some spices, and a couple of days of chillin' time.
So I whipped out one of our family-favorite ways to enjoy fresh garden cucumbers ...

Pretty much any time I can get my hands on a bunch of garden-fresh cucumbers.
What I adore about these refrigerator pickles is they're so simple to make.
Just start by cutting some small pickling {or Kirby} cucumbers into spears and packing them vertically into a jar. Pack them in there pretty tight, filling that jar right up.
I think every woman in our family has an old pickle jar stashed somewhere in her cupboards for making these fresh cucumber pickles.
Pretty much any jar will work. It can be a cute little jar (like these cute jars available on amazon.com )... or an old saved pickle jar.

Whatever jar you choose, pack that jar tight with cukes.
Next, fill the jar up to just past the halfway point with apple cider vinegar. About like this ...
Then fill the remainder of the jar with water, up to the top of the cukes.
Then measure out spices and load them right on top of the cukes.
Finally, close the jar and give everything a good shake, shake, shake to get it all mixed up.
The spices will distribute throughout the liquid in the jar, getting ready to do their job of seasoning the cucumbers. If the spices seem to be stuck at the top of the jar, just give the jar another shake or two to move them around.
And that's it! That's all it takes to prepare these fresh pickles.
Stick the jar in the refrigerator for at least about two days to let the vinegar and spices do their thing.
Oh, and here's the regular old pickle jar I keep on hand for making these. Same process ... different jar.
After the cukes have had their fridge chilling time ... poof! ... You've got Fresh Cucumber Pickles.
Now isn't that an easy way to enjoy summer's bounty of fresh garden-picked cucumbers? I sure think so! And it's a darn tasty way, too.

ingredients:
- small pickling or Kirby cucumbers unpeeled, ends trimmed, & cut into spears
- apple cider vinegar
- water
Spices:
- 1 1/2 T. dried minced onion
- 1/4 tsp. crushed red pepper
- 1/2 tsp. dill seed
- 1/2 tsp. dried dill weed
- 1/4 tsp. celery seed
- 1/2 tsp. salt
instructions:
How to cook Fresh Cucumber Pickles {a.k.a. Refrigerator Pickles}
Place in a large jar, in this order:
- Cucumber spears placed in vertically to fill the jar tight
- Apple cider vinegar fill to a little over 1/2-way up the jar
- Water fill to the top of the cucumbers, leaving a little bit of space at the top for the spices
- Spices sprinkle on the top
Mix & chill:
- Place the lid on the jar and shake it up, mixing the spices into the vinegar mixture.
- Put in the refrigerator for at least two days before eating.
TRACEY'S NOTES:
- Pickles can be stored in the refrigerator for about a week. After that, the spices get too strong in the cucumbers!
- Spice amounts are approximate -- adjust spices to personal taste.
