Grape Salsa ... great for chips, chicken or fish!

I got to thinking about Cinco de Mayo today, and how it's right around the corner -- which also got me to thinking about this totally tasty Grape Salsa. Truly, I was thinking about it so much because it's super delicious and because I hadn't made it in a very long time.
And then I realized I also hadn't shared this fun and unique Grape Salsa recipe here on the blog yet.

So of course you know what I did, right? I whipped up a big bowlful of Grape Salsa to enjoy and photo to share with you!
This Grape Salsa may seem like a bit of an odd flavor combination. But trust me, it's a flavor combination that's absolutely delicious.
With it's mix of red and green grapes, red onion, jalapeno, cilantro, fresh lime, and finely chopped English cucumber, this Grape Salsa may seem like a bit of an odd flavor combination. But trust me, it's a flavor combination that's absolutely delicious.
The hit of sweetness from the red grapes pairs perfectly with the acidity of the green grapes and fresh lime. And the little bit of cilantro and jalapeno? ... so yummy.
The jalapeno is seeded, so there's not a lot of heat in this salsa. But you could easily amp the heat up a bit by leaving in some of the jalapeno seeds and ribs.
To make a batch, just take a mix of red and green seedless grapes and cut them into quarters. If the grapes are super small, you can just cut them in half. You want to just make sure the grapes aren't in super huge chunks.
Add in some finely chopped peeled English cucumber, red onion, and seeded fresh jalapeno.
Then finish the salsa off with a little chopped fresh cilantro, salt, and a squeeze of fresh lime juice.
Mix everything up, chill the finished salsa for a bit to let the flavors meld, and then you're good to go!

But with its bright, fresh flavors, this salsa also very nicely compliments grilled chicken or fish. Just spoon a little bit over the top for a wonderfully flavorful topping!
Not to mention with it's purple and green, Grape Salsa is quite pretty too. And really pops as a bit of color on the plate.
As for us? We'll be enjoying our bowlful tonight alongside honey-lime marinated chicken. And probably just simply scooped up with some chips, too ... just the way I like it best.

- 1 c. quartered seedless green grapes
- 1 c. quartered seedless red grapes
- 3/4 c. finely chopped peeled seedless (English) cucumber
- 1/4 c. finely chopped red onion
- 3 T. chopped cilantro
- 1 T. finely chopped jalapeno (seeds & ribs removed)
- 2 T. fresh lime juice (about 1 lime)
- 1/4 tsp. salt

How to make Grape Salsa
- Combine all ingredients in a medium-sized bowl.
- Cover and refrigerate for an hour to allow flavors to meld, stirring occasionally.
- Serve with tortilla chips or spooned over grilled chicken or fish.
