If you're looking for a little inspiration to get in the Thanksgiving mood, this tasty Turkey & Dressing Casserole is just the thing.

It's a perfect dish for a family dinner to get in the Thanksgiving spirit, or for a pre-turkey-day "Friends-giving" where you want something a little different than the traditional menu. Or heck, put this tasty dish on the Thanksgiving day menu itself if you'd like!
But you certainly don't have to cook a whole bird or have turkey leftovers to make this.
For this particular dish pictured in the photos, I used a package of turkey tenderloins which you can find in the poultry area of the grocery store meat case. Turkey tenderloins come in about 1-pound to 1 & 1/2-pound packages, and were the perfect amount of turkey for this recipe.

When I made this for dinner the other night, I wasn't sure what our 7-year-old daughter would think of it. She loves turkey she's a total meat lover, and would subsist on meat alone if we'd let her.
But she's not a fan of dressing. So, I did have some concern about how dinner was going to go. {There's always peanut butter & jelly as a back-up plan!}
This is one of my favorite casseroles ... and knew it was just the thing I needed to get me in the spirit for gearing up for the holidays.

Once we could convince her to actually take a bite, she decided it was actually good. I'd say the layer of melty cheese on top sure helped with her perspective ... in the world of a 7-year-old, melty cheese makes everything better.

ingredients:
- 1 (8 oz.) package herb-seasoned stuffing mix {I use Pepperidge Farm}
- 1/2 c. butter, melted
- 1 c. chicken broth
- 3 ½ to 4 c. chopped cooked turkey
- 3/4 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. mayonnaise
- 1/2 tsp. salt
- 2 eggs, lightly beaten
- 1 ½ c. milk
- 1 c. (4 oz.) shredded mild or medium cheddar cheese
instructions:
How to cook Turkey & Dressing Casserole
- Spray a 9x13” baking dish with non-stick cooking spray. Mix together stuffing, melted butter, and chicken broth. Place half of the stuffing mixture in the bottom of the prepared baking dish. Set aside remaining stuffing mixture.
- Mix together chopped turkey, onion, celery, mayonnaise, and salt. Spread turkey mixture evenly over stuffing mixture in the baking dish. Top with reserved stuffing mixture.
- Beat eggs and milk together. Pour evenly over stuffing mixture in the baking dish.
- Cover baking dish with foil and refrigerate for at least 4 hours or overnight.
- Remove foil and bake at 350℉ for 45 minutes. Sprinkle top with shredded cheese and bake 10 – 15 minutes longer until cheese is melted.

- If you don't have leftover turkey, a 1 & 1/2 pound package of turkey tenderloins, cooked and chopped, works well for this recipe.
