I said good-bye to it by gobbling it all up for lunch.
I must say, it met a very tasty demise!
Truth be told, though, I stole my ham leftovers.
Okay, so not really stole. I took them from the ham my Mom cooked for Easter, to be exact. Yes, I still get away with taking absolutely zero responsibility for our family's Easter dinner and have the luxury of simply helping my Mom out. But I still get the benefits of enjoying leftovers since Mom sends me and the hubby home with a doggie bag each year.
Nothing says comfort food like creamy and delicious ham salad. Just perfect for using up those ham leftovers!
But I think I took a little more ham this year than Mom really wanted me to. Don't worry, Mom! ... I assure you it didn't go to waste.
I've always been a fan of ham salad, and love to eat it both in sandwiches and slathered on top of crackers. Either way is just fine with me.
When I make my salad, I like to include a generous amount of pickle relish ... though now I use salad cubes instead ...

Ham Salad

ingredients:
- 2 c. fully cooked ham
- 1 hard-boiled egg
- 1/4 c. sweet salad cubes {or sweet pickle relish}
- 1/3 c. mayonnaise
- 1/4 tsp. black pepper
instructions:
How to cook Ham Salad
- Process ham in a food processor until finely chopped, or mince finely with a knife.
- Finely chop egg and combine with ham. Add salad cubes and pepper. Stir in mayonnaise, adding enough to make the ham salad smooth and creamy.
- Chill for about an hour before serving to let the flavors meld together.
