Instant Pot Lemon Rice
This zesty and flavorful lemon rice is so quick and easy to make in the Instant Pot. It's the perfect side dish!
Can you believe I've never actually made white rice in my Instant Pot? I use it almost daily, and it's my go-to for brown rice, but somehow I've never actually gotten around to cooking white rice in it. I used the rice function for the first time while I was making this lemon rice, and it turns out it's pretty simple and quick. I've never been great at cooking rice on the stovetop (somehow it just never turns out the way I want it to), but using the Instant Pot makes it so easy to do! This lemon rice has the perfect fluffy texture, and a delicious and bright lemon flavor. It's the perfect side dish for the greek chicken skewers I shared earlier this week, but it also works wonderfully as a side dish for grilled fish or seafood.
I added a little turmeric to the rice to give it a prettier yellow color, but if you're not a fan, you can definitely choose to leave it out. This rice reheats really well, and also freezes well, so feel free to double or triple the recipe and save the rest for another day. This lemon rice is the perfect side dish!
Instant Pot Lemon Rice
1 1/2 cups chicken broth
1 tablespoon butter
zest and juice of one lemon
1 teaspoon salt
1/4 teaspoon turmeric
1 1/2 cups long grain white rice
Add the chicken broth, butter, lemon, salt and turmeric to the Instant Pot. Cook the broth mixture on the sauté setting until the butter is melted and the broth is warm. Stir in the long grain rice, cover, and set the lid to seal. Cancel the sauté setting, and use the rice setting of the Instant Pot, or cook on manual for 12 minutes at low pressure. Let the pressure naturally release, then fluff the rice with a fork before serving.
