As a food blogger, we sometimes take on writing articles for other sites. Which is just the case with me recently, when I partnered with Food.com {which is now Genius Kitchen} to create how-to articles and photos for some basic cooking techniques.
My two latest assignments? How to Hard Boil Eggs and How to Make Deviled Eggs. Which led to me taking just over 1,000 photos of eggs by the time all was said-and-done with the step-by-step photos. {Yes indeed, I take way too many photos to get the handful I'm satisfied with.}
Happily, these assignments also led to the creation of these scrumptiously tasty Jalapeno-Lime Deviled Eggs.
You know, because if I'm going to hard boil a ton of eggs to photo shoot for an article, ...
I'm certainly going to play around with those hard boiled eggs when the photo shoot's done! That's just what I do.
So after whipping up a batch of our favorite classic Southern Deviled Eggs, I decided to get creative and try out some other deviled egg variations like Bacon & Scallion Deviled Eggs and Bacon-Cheddar Deviled Eggs. I even had fun coming up with different ways to garnish them ... which led to my fun post "10 Deviled Eggs Garnishes {That Aren't a Sprinkling of Paprika}." Not that there's anything wrong with topping deviled eggs with paprika! ... Just sometimes, perhaps, you want something a little bit different.
But the hands-down winner of my deviled eggs recipe adventure were these rather-different-for-a-deviled-egg Jalapeno-Lime Deviled Eggs. They absolutely knocked our socks off!
They're packed full of chopped fresh jalapeno, cilantro, fresh lime juice, and lime zest, which sounds like a pretty strange combination of flavors to pack into an egg. But let me tell you, these eggs deliver up a zippy little spicy-yet-refreshing flavor punch that's oh so good.
The heat from the jalapeno is definitely there, but it's not too overpowering to be tasty. Then the fresh lime juice and lime zest add a freshness of flavor that really just brighten up the deviled eggs. These eggs truly aren't your Mama's potluck deviled eggs!
So to add a little zing to your traditional deviled egg plate, give Jalapeno-Lime Deviled Eggs a try. They'll bring your egg plate an unexpected spicy zippy-ness, for sure.

Jalapeno-Lime Deviled Eggs
These Jalapeno-Lime Deviled Eggs aren't your mamma's deviled eggs! Packed full of chopped fresh jalapeno, cilantro, fresh lime juice, and lime zest, Jalapeno-Lime Deviled Eggs deliver up a zippy little spicy-yet-refreshing flavor punch.

ingredients:
- 6 hard boiled eggs
- 1 1/2 tsp. fresh lime juice
- 1 T. minced fresh jalapeno {seeds & ribs removed}
- 1 T. minced fresh cilantro
- 1/4 tsp. salt
- 1/8 tsp. minced lime zest {plus extra zest for garnish}
- 1/4 c. mayonnaise
instructions:
How to cook Jalapeno-Lime Deviled Eggs
- Cut hard boiled eggs in half lengthwise. Remove yolks and place in a small mixing bowl.
- Mash yolks with a fork until they resemble a sandy texture. Mash in lime juice, jalapeno, cilantro, salt, and lime zest until well combined. Add mayonnaise; stir until well combined and smooth.
- Place yolk mixture in a piping bag fitted with a large round tip.* Pipe yolk mixture into the cavity of each egg white. Garnish each deviled egg with lime zest and a small piece of jalapeno {for a spicy topping be careful not to include seeds!} or a cilantro leaf {for a milder topping}.
- Refrigerate for two hours or overnight before serving to allow flavors to meld.
TRACEY'S NOTES
- * I use a disposable piping bag. A zip-top baggie can also be used place yolk mixture in the baggie, seal, and cut a bottom corner of the baggie. Or, simply use two spoons to spoon the yolk mixture into the egg whites.
- If preparing in advance, be sure to sprinkle lime zest only on the yolk filling portion of the eggs as the zest will make green dots on the whites as the eggs sit.
