Red White & Blue Cherry Almond Cookies

Who doesn't love a cookie that's both tasty and adorable? Well, back leading up to Christmas time, I made these really tasty and beautiful Cherry Almond Cookies. They were complete with a juicy maraschino cherry baked right in the middle and a fun little white chocolate drizzle across the top ...
Which got me to thinking ...
With their bright pop of cherry-red in the center, wouldn't adding a drizzle of red and blue make these little cookie beauties just perfect for the 4th of July?
With their fabulous cherry-almond flavor combination, they're not just adorable ... they taste fabulous, too.
So last Saturday afternoon, Little Miss H. and I decided to give a batch a try!
We baked up the cherry almond cookie bases, and then got ready to drizzle away and see how the cookies looked all dressed up in red, white, and blue for the 4th of July fireworks.
Our verdict?
We loved the red, white, and blue 4th of July look! ... with a caveat.
When using the three colors of red, white, and blue to drizzle the cookies, the cookies can easily get messy looking.
So we tried several ways of drizzling them to see what looked best. We decided a "cross-hatch" drizzle pattern, with the red and blue going one direction and the white going the opposite direction, looked best.
Also, the cookies looked best when the white drizzle goes on last, crossing OVER the red and blue ... which allows the white to still have a little "pop" without getting lost under the other colors.

{Sidenote: I had set several different drizzle variations aside to take a photo to show you the different looks ... but then, in a "kitchen glitch" ... aka: my hubby coming by and grabbing them for an afternoon snack ... the cookies got gobbled up before I took the photo.}
Now with that being said about our favorite way to drizzle the cookies, go with whatever drizzle pattern, or patterns, you like best!
Because no matter how you decorate these tasty and beautiful red, white, and blue cookies, they'll pair just perfectly with your 4th of July fireworks.

Ingredients
- 1/2 c. unsalted butter, softened
- 4 oz. cream cheese, softened
- 1 c. brown sugar
- 1 large egg
- 1 tsp. almond extract
- 1/2 tsp. vanilla extract
- 2 c. all-purpose flour
- 1/2 tsp. salt
- 36 maraschino cherries, well drained & patted dry with paper towels
- about 2 oz. red candy melts
- about 2 oz. blue candy melts
- about 2 oz. white chocolate
- Beat butter, cream cheese, and brown sugar with an electric mixer at medium speed until fluffy, about 3 minutes. Add egg, almond extract, and vanilla extract; beat until just combined.
- Combine flour and salt. Gradually add flour and salt to butter mixture; beat until combined. Cover and chill for at least 2 hours or overnight.
- Roll dough into 36 1-inch balls. Place 2 inches apart on baking sheets. With your thumb, press an indentation into the top of each ball. Place a cherry in each indentation.
- Bake at 350 degrees until edges are light golden brown, about 12 - 14 minutes. Let cool on pan about 5 minutes; transfer to a cooling rack to cool completely.
- Place red candy melts, blue candy melts, and white chocolate in SEPARATE small zip-top plastic bags {I use snack size}. Set the sealed bags in a bowl of warm water to soften. Gently knead the candy melts and the white chocolate with your fingers until melted and smooth, placing back in the warm water for a minute or two as needed.
- Working with the red or blue candy melts first, snip a very small hole in the corner of the plastic bag. Drizzle over the cooled cookies. Repeat with the other color of candy melts, and then with the white chocolate. Let stand until the drizzle is set.
- Store in an airtight container for up to a week.
Makes 36 cookies.
