This past Thanksgiving, we created a new holiday tradition at our house easy Overnight Cinnamon Roll Casserole for breakfast on Thanksgiving weekend. With the ease and deliciousness of Sister Schubert's Cinnamon Rolls, it will most likely become a new Christmas breakfast tradition, too!
In the form of amazing, irresistibly delicious, and cinnamon-comfort Overnight Cinnamon Roll Casserole, made easy with Sister Schubert's Cinnamon Yeast Rolls.
And whipping up this yummy breakfast treat truly couldn't be much simple. It makes it easy to serve cinnamon roll deliciousness to a crowd, for sure.
Simply start with 2 pans of Sister Schubert's Cinnamon Yeast Rolls, found in the freezer section of many grocery stores. While still in the pan they come in, slice them up by just running a knife through them in both directions.
Then toss the cinnamon roll pieces in a baking dish and pour an egg-and-milk-and-cinnamon mixture all over them.
Finally, sprinkle on a super tasty brown sugar and pecan topping.

Refrigerate overnight {or for at least 4 hours}, and then bake the casserole up until it's all nice and golden brown.
And beautiful. And I-want-to-dig-in-with-my-fork-RIGHT-NOW yummy looking.
I like to top my Overnight Cinnamon Roll Casserole with a drizzle of pure maple syrup. And then dive in to the cinnamon goodness. All thanks to the ease and deliciousness of Sister Schubert's Cinnamon Rolls.

Overnight Cinnamon Roll Casserole
Enjoy easy Overnight Cinnamon Roll Casserole, made with the convenience and deliciousness of Sister Schubert's Cinnamon Rolls. Perfect for serving up a crowd!

Filling:
- 2 packages Sister Schubert's Cinnamon Yeast Rolls {thawed or not thawed ... it doesn't matter}
- 6 eggs, beaten
- 2 c. half-and-half
- 1 c. milk
- 1/4 c. pure maple syrup
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- pinch salt
Topping:
- 3/4 c. chopped pecans
- 1/2 c. brown sugar
- 1/4 c. cold butter, cut in small pieces
- 1/2 tsp. ground cinnamon
instructions:
How to cook Overnight Cinnamon Roll Casserole
- Spray a 9x13" baking pan with non-stick cooking spray. Cut cinnamon rolls into approximately 1-inch pieces: while still in the foil pan, run a knife through the rolls, making slices about 1/2-inch apart; rotate pan and repeat making slices perpendicular to the first slices. Place cinnamon roll pieces in the prepared baking pan, breaking up any large pieces with your fingers.
- Warm the icing packets that come in the cinnamon roll packages in the microwave for about 8 to 10 seconds. Drizzle/drip icing over the top of the cut cinnamon roll pieces.
- Combine beaten eggs, half-and-half, milk, maple syrup, vanilla, 1 teaspoon cinnamon, nutmeg, and salt; whisk until well combined. Pour evenly over cinnamon roll pieces.
- Combine chopped pecans, brown sugar, 1/2 teaspoon cinnamon, and butter in a small bowl. Cut with a pastry cutter, two knives, or your fingers until mixture resembles coarse crumbs. Sprinkle evenly over the top of the cinnamon rolls.
- Cover and refrigerate overnight {or at least 4 hours}.
- Bake, uncovered, at 350 degrees for 50-60 minutes until golden brown and set in the center. Serve with maple syrup to drizzle over the top.
