These tasty tomatoes whip up super quickly ... in about 10 minutes start to finish. And deliver up great flavor, too.
Simply cut some fresh Roma tomatoes in half the long way and place them on a broiler pan or baking sheet. Romas work well because of their fairly small size, and because they tend to be firmer and less juicy than other tomato varieties.
If you have other varieties from your garden you'd like to use, choose some of your smaller tomatoes. And if the tomatoes are quite juicy, consider removing some of the seeds and juicy pulp.
For the topping, toss together some bread crumbs, shredded Parmesan cheese, fresh parsley, and olive oil. Then generously mound the mixture on top of the halved tomatoes, like this ...
Then pop the topped tomatoes under the broiler for a few minutes until the cheese is a bit melty and the topping is lightly browned.

ingredients:
- 4 to 6 Roma tomatoes, halved lengthwise
- 1/2 c. Italian-style bread crumbs {or freshly made bread crumbs from about 2 slices of bread}
- 2/3 c. shredded Parmesan cheese
- 3 T. chopped fresh parsley
- 1/3 c. extra virgin olive oil
- salt & pepper, to taste
instructions:
How to cook Parmesan Broiled Tomatoes
- Place tomato halves on a broiler pan, cut side up.
- In a mixing bowl, combine bread crumbs, Parmesan cheese, parsley, olive oil, salt, and pepper. Stir until well combined. Press a little bit of the mixture together with your fingers; if mixture is too dry to just barely hold together in a clump, drizzle and mix in a little bit more olive oil.
- Top each tomato half with approximately one tablespoon of the Parmesan mixture, mounding it up on top of the tomato. Place tomatoes under a pre-heated broiler; broil until the cheese is melted and topping is lightly browned, about 3 - 5 minutes.
