Oh, how I would love to be in the tropics or at the beach right now ... enjoying the surf and the sand, cold pina colada in my hand. But alas, I am not. Nope ... I'm in the throes of house hunting and preparing to move. All of which can't be over soon enough for me, truth be told.
So instead of the beach, I'll just have to enjoy my tropical flavors at home. Like in this Pina Colada Chicken Salad.
While I can't honestly say this chicken salad comes even close to comparing to a frosty pina colada at the beach, I can say it packs a wonderful pineapple-&-coconut flavor punch.
Which is surprisingly good in a chicken salad.
When I came across this recipe, I'll admit I was a bit concerned it would be too sweet. But obviously not concerned enough to keep me from giving it a whirl! No, I'm always a sucker for non-traditional flavor or ingredient combinations.
Well, I'm happy to report that my sweetness concern was unwarranted. With just a few simple tweaks to the savory components, the amount of sweetness was just right for me.
Pina Colada Chicken Salad with Grapes

Ingredients
- 1 (6 oz.) container low-fat pina colada yogurt {or coconut yogurt, if you can't find pina colada}
- 1/4 c. mayonnaise
- 1 (8 oz.) can crushed pineapple, drained
- 1/4 tsp. dried sage
- 1/8 tsp. dried thyme
- 1/2 tsp. salt
- 1/8 tsp. ground black pepper
- 1 lb. boneless, skinless chicken breast, cooked and chopped
- 2/3 c. red seedless grapes, halved
- 1/4 c. chopped celery
- 1/4 c. chopped green onions
- 1/2 c. sliced almonds
- Combine the yogurt, mayonnaise, crushed pineapple, sage, thyme, salt, and pepper in a large bowl. Add the chicken, grapes, celery, green onion, and sliced almonds; stir to combine.
- Chill for about 30 minutes before serving to let the flavors meld.
