Cooler fall weather is beginning to creep upon us. And along with it for many of us comes the craving for comfort food dinners. I know I am certainly one who starts to crave comfort food as soon as the cooler fall temperatures set in. Foods like creamy mashed potatoes, baked macaroni and cheese, and perhaps a hearty pan of chicken pot pie. Or, the comforting goodness of these family-favorite Slow Cooker Beef Tips.
So when I got the opportunity recently to take on a dinner recipe challenge from my favorite grocery store, Harris Teeter, this Slow Cooker Beef Tips recipe immediately jumped into my mind.
What exactly was my Harris Teeter recipe challenge, you ask?
To prepare a recipe for $20 or less ... Using only Harris Teeter private-label items as ingredients.
"Whaaaaattttt?? How is that even a challenge?" I thought to myself.
See, because as a very frequent shopper at Harris Teeter, I am well aware of the great variety of products they carry in their private-label product lines. I knew it would be no problem to find a Harris Teeter version of everything I needed.
And I also knew I'd be fully satisfied with the quality of each ingredient, too. Because Harris Teeter prides itself in developing private-label products that are just as good as ... if not even better ... than the leading brands. Not a one of their products has ever let me down.
But what about cost? Certainly there's no way I could make a beef recipe for under $20, right?
Wrong.
My total cost = $18.03
And that included a beautiful one-pound beef top sirloin steak, family-sized prepared mashed potatoes, and even a bunch of fresh parsley to chop and sprinkle on top of each serving.
Kudos to Harris Teeter for offering such a fabulous variety of high-quality private-label products that make shopping for my family so easy and affordable.
Now when it comes to preparing this dish, it's just as easy as shopping at Harris Teeter.
Simply cut top sirloin steak into cubes, season generously with salt and pepper, and brown the steak cubes on all sides in a hot skillet. Browning the meat before placing it in the slow cooker develops a wonderful richness of flavor that just can't be created by the slow cooker alone, so it's important to the final dish not to skip this step.
Then just place the browned beef in a slow cooker along with chopped onion, sliced mushrooms, beef broth, and a touch of Worcestershire sauce. Set the temperature setting to LOW, and let the beef simmer away for 6 to 8 hours.
The beef will get super tender and develop a rich, flavorful broth as it cooks.
Once the beef is tender, mix a little of the hot broth with cornstarch until smooth. Then add the mixture back to the slow cooker and let it cook on HIGH heat for about 20 minutes or so.
This will thicken the cooking broth and turn it into a wonderfully tasty, full-of-comfort gravy ... just perfect for spooning and enjoying over creamy mashed potatoes.

ingredients:
- 1 large onion, halved & cut into slivers
- 8 oz. sliced mushrooms
- 1 to 2 lbs. beef top sirloin steak, cubed
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 T. canola or vegetable oil
- 2 1/3 c. (21 oz.) beef broth
- 1 ½ T. Worcestershire sauce
- 3 T. cornstarch
- cooked mashed potatoes
- chopped fresh parsley {optional}
instructions:
How to cook Slow Cooker Beef Tips
- Place onion and mushrooms in the bottom of a slow cooker.
- Sprinkle beef cubes evenly with salt and pepper. Heat oil in a large skillet over medium-high heat. Add half of the beef cubes and brown on all sides. Transfer browned meat to the slow cooker. Repeat with the remaining beef cubes.
- Add about 1/3 cup beef broth to the skillet; stir to loosen the browned bits from the bottom of the pan. Stir in remaining beef broth and Worcestershire sauce, heat to boiling, and pour over meat in the slow cooker.
- Cook, covered, on LOW setting for 6 – 8 hours until meat is tender.
- With a spoon, remove about 1/3 cup liquid from the slow cooker and place in a small bowl. Gradually whisk in cornstarch, whisking until mixture is smooth.
- Stir cornstarch mixture into the slow cooker. Cook, covered, on HIGH setting 15-30 minutes until gravy is thickened.
- Serve over hot cooked mashed potatoes. Sprinkle each serving with chopped fresh parsley, if desired.
