It's turkey time! And I just couldn't be happier. Thanksgiving is one of my favorite days of the year, which, as a food blogger who's obsessed with food and recipes, probably comes as no surprise.
What may come as a surprise, though, is when it comes to Thanksgiving dinner I could take or leave the turkey.
Oh sure, I cook a big ol' bird ... but could really go without eating any of it during the Thanksgiving meal. Me? I'm all about the side dishes! Like the Cabernet cranberry sauce, Southern cornbread dressing, Mom's baked macaroni and cheese, or our family-favorite broccoli casserole. And the creamier and cheesier, the better!
But turkey leftovers?
This dish is also known as Leftover Turkey Spaghetti Casserole, but Turketti just sounds so much more fun, doesn't it?
Turkey leftovers, I love!
Nothing beats a straight-up turkey sandwich on white bread, slathered with mayo and topped with a slice of leftover dressing. For me, that's pure leftover turkey heaven.
But I do love to make soups and creamy casseroles with our turkey leftovers, too. And am always on the lookout for new ways to enjoy that leftover turkey.
Classic turkey noodle casserole is one of our family's favorites, as is my leftover rotisserie chicken soup made with turkey instead of chicken. And last year, I created the most delicious creamy turkey noodle soup with spinach recipe ... loaded with veggies and turkey in a hearty cream broth, it is soooo good.
This year I have another new creation to add to the leftover turkey line-up - this creamy, cheesy Turketti.
This dish is also known as Leftover Turkey Spaghetti Casserole, but Turketti just sounds so much more fun, doesn't it?
But whatever you call it, it's really tasty and really easy to make.
Creamy spaghetti loaded with chopped leftover turkey and slathered with cheese, Turketti debuted to rave reviews with our 8-year-old and 14-year-old kiddos.
Mix the hot cooked noodles with chopped fully-cooked turkey, a little chopped onion, red pepper, and some green pepper. Then add in cream of mushroom soup, chicken broth, and shredded cheddar to make the mixture creamy.

Spoon the mixture into a casserole dish, top it all with some more shredded cheddar, and then bake it up until it's all bubbly around the edges.
And that's all there is to it. Pretty easy, indeed, right?
Serve it up with some crusty bread slices or toasty garlic bread, and a salad perhaps, for one hearty and tasty meal.

ingredients:
- 8 oz. uncooked spaghetti
- 2 c. diced leftover fully-cooked turkey
- 1 medium-sized onion, finely chopped
- 1/3 c. chopped red bell pepper
- 1/3 c. chopped green bell pepper
- 1 (10.5 oz.) cream of mushroom soup
- 1/2 c. chicken broth
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 c. shredded medium or sharp cheddar cheese
instructions:
How to cook Turketti {aka: Leftover Turkey Spaghetti Casserole}
- Cook spaghetti in boiling salted water, according to package directions.
- In a large mixing bowl, combine turkey, onion, red pepper, green pepper, cream of mushroom soup, chicken broth, salt, and pepper. Add 1 ½ cups of the shredded cheese and stir until well combined.
- Add cooked spaghetti and stir until well combined.
- Spoon spaghetti mixture into a greased 2-quart casserole dish. Top with remaining ½ cup shredded cheese.
- Bake at 350℉ for 45 minutes, or until heated through and bubbly around the edges.
