Whole Grain Pancake Mix {my new go-to mix!}
Wow, I just ate the BEST pancakes I've ever made! Light, fluffy, and whole grain to boot ... thanks to Whole Grain Pancake Mix I whipped up myself. Oh, I've just found my new go-to for pancakes.

I am a huge fan of pancakes ... though I usually enjoy them as breakfast-for-dinner instead of as traditional breakfast food. Hey, there's absolutely nothing wrong with breakfast-for-dinner! It's one of my faves.
And when it comes to 'bread goods' in our house including our pancakes and waffles, we try to eat only whole grain. 'Try' being the key word. We're works in progress on that. But want to know one thing that's definitely helping us out with the whole grain thing?
This Whole Grain Pancake Mix. Oh. My. Gosh. You all. This mix makes the best pancakes I've ever had. No joke.
When I made pancakes with this mix for the first time, I half expected them to be great ... and half expected them to be a little dense. Or a little grainy. Or a little lacking in flavor. Like can happen with whole grain stuff sometimes.
I was so thrilled when the 'great' half turned out to be right!
Pancakes from this mix aren't dense at all. In fact, they cook up super light and fluffy.
Grainy? Not a bit! Nope. I'm happy to say there's no 'feel' of coarse whole grain flour in the texture.
And flavor? Full of it. These pancakes truly are delicious and flavorful.
Now, I know the surface color is a tad bit dark ... but that's more a factor of the cook than the pancake. Let's just say I was still getting used to cooking on the stove in my new house when I made this batch. Yeh. The stove and I are still getting to know each other. We're working on reaching an 'understanding.' ... it's a process.
Okay, so if you've been reading and following along with me for a while here at , you know I grew up in Vermont. And you know I am a fanatic about pure Vermont maple syrup. And that I douse all of my pancake-y waffle-y stuff in that golden delicious nirvana-kinda-syrup.
So you're probably gonna be kinda shocked to hear what I say next ...
Not only are these whole grain pancakes fabulous with yummy pure maple syrup, they're great paired up with Cinnamon Syrup, too.
Yes, can you believe it?
I actually poured something other than maple syrup on my pancakes. Oh, the shock!
And it was good.
Chock full of yummy cinnamon, Cinnamon Syrup a great alternative for a plateful of pancakes. Or waffles. Or ice cream. Oh wait ... that would be a bowlful of ice cream. {Click to get the Cinnamon Syrup recipe.}
I'm thinkin' of using this Whole Grain Pancake Mix as my hostess / neighbor / little treats gifts at Christmas this year. You know, a cute little bag of mix ... tied with a colorful ribbon ... paired with a little jar of Cinnamon Syrup. What do you think?? Oh, yes, I think it'd be a fun and tasty little gift!
Just don't tell my maple syrup I'm considering giving out cinnamon syrup in the gifts. While this Whole Grain Pancake Mix has certainly replaced my former buy-it-in-a-box mix as my new pancake go-to ... maple syrup's place in my heart is secure.
I think this mix and my maple syrup will get along quite well. For years and years to come.

Whole Grain Pancake Mix
- 11 c. whole wheat flour
- 2 c. buttermilk blend powder
- 1 c. granulated sugar
- 1/3 c. baking powder
- 2 T. baking soda
- 2 T. salt
- 2 c. quick-cooking oats
- Place oats in a food processor. Cover and process until finely ground, about 20 seconds.
- Place all ingredients in a large bowl. Stir until well combined.
- Store mix in an airtight container {or several airtight containers} in the refrigerator or freezer for up to six months. {The shelf life of whole wheat flour is extended by storing it in the fridge or freezer.}
To Prepare Pancakes:
Ingredients
- 2 c. whole grain pancake mix
- 2 eggs, lightly beaten
- 1 c. water
- 1/4 c. canola oil
- Place pancake mix in a large mixing bowl. In a small bowl, whisk together egg, water, and oil; stir mixture into pancake mix until just moistened.
- Pour batter by 1/3 cupfuls onto a greased hot skillet or griddle. Allow to cook until small bubbles form on top; flip with a spatula and continue cooking until the second side is golden brown.
