We love to eat spicy food in our house.

I kind of didn't realize just how much  we love to eat spicy food until I started writing Hot Corn Dip, easy Restaurant-Style Salsa , Tex-Mex Ravioli Lasagna ... and Baked Jalapeno Poppers ... and ... Tamale Pie Casserole ... and Spicy Tortilla Lasagna ... and ... well, you get the point.  We looooove our spicy food.

Think of them like a cornbread muffin, but with the flavor and spiciness of salsa added in.

So naturally, we love these super easy, super yummy Spicy Salsa Muffins, too.

Think of them like a cornbread muffin, but with the flavor and spiciness of salsa added in.  They're great to accompany a hearty bowl of soup or any Tex-Mex type dish.

With just a few simple ingredients and less than 30 minutes from bowl-to-baked, you can be enjoying these little salsa muffins with your dinner.  Or your lunch.  Or your breakfast.  Okay ... maybe not with your breakfast - But I guess you sure could if you want to!

To whip up a batch of these easy little muffins, start by mixing together flour, cornmeal, baking powder, salt, and a little sugar as the dry ingredients.

In a separate bowl, mix together the wet ingredients - a combination of your favorite jarred chunky salsa, melted butter, buttermilk, and egg.

For the salsa, I always use Pace brand medium chunky salsa.  The muffins are going to take on the flavor of the salsa you use, so choose the salsa you like best.

Add the wet ingredients to the dry ingredients and stir until the ingredients are just combined.

Then scoop the batter into muffin tin cups and then bake it up.  Much like buttermilk biscuits, these muffins only need about 15 minutes of baking time, so they're super quick to make.

Salsa muffins bake up all flecked with the tomatoes and peppers from the salsa.  And with most of the heat from the salsa you choose, too - giving them a nice spicy flavor that combines with the tang of the buttermilk.

Also much like buttermilk biscuits, these muffins bake up with a pretty fluffy and tender texture inside.

We love to enjoy these with a bowl of soup, any Tex-Mex type dish, or a hearty bowl of chili.

But no matter what we pair them with, they're certainly one quick, easy, and tasty side.

Spicy Salsa Muffins

ingredients:

  • 1 c. all-purpose flour
  • 1 c. cornmeal
  • 3 T. granulated sugar
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 c. chunky salsa
  • 1/2 c. buttermilk
  • 6 T. butter, melted
  • 1 egg, lightly beaten

How to cook Spicy Salsa Muffins

  1. Combine flour, cornmeal, sugar, baking powder, and salt in a mixing bowl. In a separate bowl, combine salsa, buttermilk, melted butter, and egg.
  2. Stir wet ingredients into dry ingredients until just moistened.
  3. Fill 12 greased muffin cups three-quarters full. Bake at 400 degrees for 15 - 18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes in the pan before removing. Serve warm.

  1. The baked muffins take on the flavor of the salsa you use, so choose the salsa you like best.  I always use Pace brand medium chunky salsa.
  2. Whole milk can be substituted for the buttermilk if you're out of buttermilk.
